This video remember so much to my grandpa, he was a butcher in Uruguay and have his own cattle, he woke us early in the morning for the butchering. Some people now consider this "cruelty" but they don't know what they are talking about...I miss him and you made me remember, thanks for that!

I'm a retired butcher and one end is the T-bone and the other end is the more expensive cut with the tenderloin is called a Porterhouse steak.i sure miss cutting meat ..you do a fantastic job .

Mornin. That saw works some slick. It takes a long time for us cutting a deer or bear or goat. We debone everything and then cut it up but usually my father has a frying pan going to keep everyone encouraged lol. Happy birthday to Mary

Very interesting video I enjoy seeing the passion just a few points not all cuts out of the hind are rounds ex. Top sirloin and one of the the best stewing meats osso bucco or what some refer to as cross cut shank. Yes that is what is considered a porterhouse rule of thumb the first 3 steaks off of the hind side about a inch thick maybe one extra you can tell the porterhouse cause they always have a the filet and the new York side always have the tendon in it
The sirloin is a cut from the back way back in front of the hips and the shoulder roast is commonly referred to Chuck roast and is literally from the shoulder.
Curtis w Jackson We use canning, drying, &freezing . We have propane refrigeration here ....and electric freezers off of our homestead that we can use. If the electric grid collapses, we’ll be canning all the frozen meat ASAP!😂
Hey brother the porter house bye the USDA measurement the tender has to be around 2 inch r bigger can't reamber the exact number I think it's 2 and a quarter to be a porterhouse !! Appreciate y'all
Is a bull really that much different in flavor and toughness to a steer? And how do you prep your bulls before butchering? Do you separate them from the hard? Feed grain? Grass fed?
We took this guy right out of the herd. Straight off grass. There’s definitely a difference in flavor between grass and grain, but between bull and steer not so much. Btw grain fed is better
To my understanding your children have taught you everything you know about slaughtering and cutting up meat and packaging more it's a good thing there's somebody out there that'll teach him kids or without them you probably wouldn't get by too good right lol you and poor old frank will sit there and starve to death them kids didn't take care of you 🤪 thought I'd throw that out there and break up the minutiae don't take it wrong brother love you you're doing a great job

A porterhouse steak must be eaten at a restaurant while a T-bone can be eaten anywhere. Especially with ice tea! Oscar doesn’t have a thing to do with it😂
