Canadian Bacon. Homemade. Smoked on the Kamado Joe.

We made our own Canadian Bacon, Cured Pork Loin or Buckback Bacon.
• Started with 10 lb pork loin, cut into two 5 lb pieces.
• Put all ingredients in 2 quarts of water until salt and brown sugar were dissolved. See recipe below
• Placed both 5 lb pieces into a 2 ½ gallon zip lock bag. These will get turned at least 1 time every day for 7 days. I actually then placed these into a large aluminum pan to avoid any possible leaking through the process.
• After 7 days, removed and soaked them for 1 hour in water to draw out excess salt, blot dry.
• Put them back in the fridge on a cooling rack so they could air dry in the fridge for 24 hours before smoking.
• Set up Kamado Joe for complete indirect cook and added 4 apple chunks for the smoke.
• Once Kamado Joe is up to temp, shooting for 225 to 250, placed them on fat side up until they reach an internal temperature of 150 degrees.
• Remove and let cool, refrigerate overnight and then slice to the thickness desired.
Dry Rub Cure: This is for 10 lbs of pork loin. 2 cups brown sugar, 1 cup kosher salt, 2 tablespoons black pepper and 2 teaspoons of pink salt #1.
Extra Smoking: For the video, we actually had 2 full pork loins and cut each in ½. We did these in different steps so we could shoot a bunch of steps at one shoot. Smoked the second piece on the Weber kettle and smoked it hard with hickory. Found out more smoke worked better on this and for the final 2 pieces, I smoked on the KJ with hickory.
Summary: It seems like a lot of steps, but it really is not too bad. The initial prep was only about ½ hour. Turning every day, only takes a few seconds. soaking and blotting dry, place in fridge overnight was about 20 min prep. Smoking the bacon was a few hours, but with a good probe, you don’t do much. Slicing and vacuumed sealing for the freezer was a longer process, but well worth it.

Thanks! This was a good one. We actually shot this many years ago, so fun for me to watch what we did again. I still do this the same way! Yes, that is my wife's mixer that she got many years ago from her Mom and Grandmother. Still works pretty good, but is showing its age. Cheers!

SDSBBQ Thanks Dash! It is easy to do, it is just some time and refrigerator space. I use the same recipe for my bacon, minus the water. I just rub the dry ingredients all over the pork belly. Let me know when you try it!

Tri-Tip Junkie It is very doable! Just takes some time, but really turned out great! We have also posted a video making regular bacon. Very similar, but I do not use the water, just the dry ingredients! Thanks for watching!
