• Started with a 12 lb Butterball Turkey.
• Seasoned with Kosmo’s Dirty Bird Hot.
• Put in the fridge to let the rub absorb for a few hours.
• Set up the Big Joe for indirect cooking and added a water pan. Held temperature between 300 and 350.
• Placed the turkey on the Big Joe and inserted the CookPerfect probe in the breast.
• Set 2 alerts, one for when the turkey reached 120 degrees and 1 hour before turkey is done.
• Pulled the turkey at 165 and covered for 15 minutes before cutting into it.
Summary: The turkey turned out great and was super tender. The CookPerfect temperature unit worked great!
