A thick rich soup on its own or a great starter for other dishes. You will want this tasty goodness on your shelf .
3 c. Dried pinto or black beans, rehydrated and partially cooked
4 lb. beef stew meat or Chuck roast cut into 1/2” cubes
1 T. Salt
2 t. Pepper
1/4 c. Olive oil
2 c. Chopped onion
1 c. Chopped red or green bell pepper
6 c. Canned tomatoes, diced
1/3 c. Finely chopped canned chipotle peppers in adobo sauce
1/4 c. Fresh lime juice
2 t. Garlic powder, optional
2 t. Mexican oregano, optional
1T. Dried cilantro, optional
Fill hot jars with hot soup to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

My son works at a big Mexican resturaunt. At the end of the day he bags up the leftover meat. There is shredded and chopped chicken, and ground and chopped beef. Daily hauls are 4 to 6 lbs. All seasoned extremely well. I have made a lot of chicken chili and today I'm going to can beef chili. Thawing out my summer jabanero's.

I think the same thing everytime! Lol. I'm always in a day dress and no sleeves. Sleeves drive me crazy when I cook or can. Im constantly drying my hands on my clothing is its fresh and clean. I really need to make some aprons.

I always oven roast the beef instead of sauteed. It works great and it's far less messy. I canned this recipe and it's amazing. I learned that from Linda's Pantry😀. I've got this chili on my shelf and took it to work for lunch on Tuesday. It's really delicious 😋

Hi Carol..I love watching your videos especially when you add the carol twist. So i canned this chili with venison Saturday. All of them sealed. I read back through the recipe and realized i missed one line of directions in the ball book. I soaked the beans overnight but didnt bring to boil or cook for 30 minutes the next day when i canned them with the meat. Is there anything i can do to remedy this or do i just pitch them? Thank you in advance!

As long as you soaked them I wouldn’t toss them but would consume sooner rather than later… or you could open the jars and reprocess as the beans would now be fully cooked. Just my opinion. It’s a lot to toss …

I've done this recipe, it's good, I add broth or tomato juice so there's more liquid. If you like more soup consistency, don't fill the jars as full of solids, that leaves you more room for the juice/sauce.

This looks so good, except the Mr. would not be happy with the spice. I like my chili with red beans, black beans and I throw in some frozen corn. Would the corn be ok to can with chili? It seems like chili is pretty versatile for canning and as long as approved ingredients are used, any recipe is good.

I believe the ball book says not to can meat in quarts. And not to can meat with beans in quarts, just pints, as the heat can't penetrate the beans enough to guarantee pasteurization. I'll try to look for specific reference if interested.

I know this is an older video but I just recently got this canning book that you are getting the recipe from. I love chili and I love it spicy so this recipe is right up my alley. But I dont eat beans(Im low carb/keto). Am I able to leave them out or add extra meat in their place? I dont want to make it "unapproved" by any means but I would love to make it and can it for my lifestyle. I’ve never made it with meatballs so I’m not sure how many pounds. Just know you have to use a tested recipe specifically for canning meatballs

Do the Ball canning books have weight recommended pressure weight for the Presto 16 quart weighted only model?

The weight recommendation are universal, whether you are using Presto or All American. Make sure to check your altitude and adjust accordingly. Happy canning

question, where do you get your Mexican oregano? I live in Newark Ohio, and work in Columbus, and can't seem to locate any, only the Italian version. At least at the Kroger, and Meijer I work and live by.

I’m also in Ohio. I get mine at Meijer BUT it’s not with the regular spices. It’s a display on an end cap in the frozen foods section (really odd place for spices). All of these spices are in bags and they sell individual jars to put them in. Check around the produce section also 😊

I got that book for Christmas. Can't wait to try this chili. Less peppers of course, but I think my son will like it. Finally, a chili recipe without cumin or chili pepper. I can't eat anything with cumin. It just doesn't agree with me. Question, if you use chopped or sliced mushrooms, why can't you pressure can in quarts? I have never heard this before. However, I don't think I've ever used mushrooms in canning before. Another question if you know, is the 3" of water added to the canner before the jars are placed in it or afterwards? That is always confusing to me. I presure canned 7 quarts of chicken soup stock last weekend. The quarts had the 3" of water rather high in the canner so I took some out to about 4". I'm learning to use a gas stove. After moving and leaving my stove behind, I replaced with propane gas stove. On the lowest setting, the canner ran out of water, not bone dry, but ciffened about an inch of liquid from each quart, quite equally to each jar. They sealed fine. Should I worry about them spoiling? This has never happened before. My canner is a Presto canner without a dial gauge. Used 10lbs ot pressure for 90 minutes. Chicken was precooked, completely done before canning. Sliced Celery, carrots, chicken and chicken broth only.

If you can mushrooms on their own, it’s only approved for canning in pints. If they’re a part of a tested recipe you can can in quarts or pints. The 3” of water is measured BEFORE adding your jars. The water level will rise as you add jars to your canner. If you still had some water left in your canner and were able to process for the proper amount of time your chicken soup should be fine if they all sealed. Siphoning usually occurs with temperature fluctuations during the canning process. Hope that helps 😊

Mushrooms are only approved for processing in pints at this time. I’m really not sure why. They are however included in other tested recipes (that include other ingredients) that allow for processing in quarts. I can’t think of anything else off of the top of my head that is jar size specific. 😊

They should be brought to at least a boil. It’s recommended to simmer 30 minutes

Do you need to simmer? Could you raw pack the meat and raw veg. Soak and simmer the beans then add. Add spices. Top with broth. Process. I see many variations.
