Excellent video tutorial. I can green chili peppers but have not tried bells. TFS 🥰👍

TY for this video. This gave me the courage to try canning bell peppers which i've never done before. I've got 8 half pints and 8 quarter pints in the canner now. I'll add it to my cabbage, carrots, onions, okra and beets which were all new to me this year. It's great to pull out a can of canned meat and throw in onions, carrots, cabbage for stew. Next on my list to can is celery. I just want some of the staples on the shelf so I can throw a meal together fast.

I always freeze our peppers, but I'm going to try canning some this year. They look great.

I did exactly what you said and my peppers shrank up to about 1/4 of the jar! I stuffed those jars so full too! I bet there's not more than 2 tablespoons of peppers in each jar. lol! I won't do that again.

I have never canned peppers or onions, so now I need to add those onto my list for this year. For some reason, we are not very successful at canning peppers, but we will definitely give it another try this summer. We are trying to switch to raised beds, so maybe that will be helpful. Slice the peppers and freeze just until solid. Then put in bag. They won’t stick together. Problem solved

Freezer space is a lot more expensive per square foot. I prefer to save freezer space for meat and store veggies at room temperature when possible

I just pickle everything so I can use a water bath.

Hi, I have a question about headspace. I noticed that the peppers extended past the 1”, So is the 1” hs only referring to the water?

It’s 1” for both. Are usually overfill, then, when I add the boiling water, a lot of the peppers will settle. If there is still too many peppers ill pull a few off the top when putting the lids on

The one inch head space is recommended, but many experienced canners know you don't have to have a full inch.
