bretoner2...yes, losing a lot of liquid doesn't hurt the food...these days I prefer to freeze, dehydrate, or pickle peppers. (better end result)

How do you use them in preparing a meal please?

pms1953..well I had way to many and would have preferred to wait until they turned red, as they are sweeter red, but ran out of time...ok so mostly I would use these as an accompaniment to breaded veal or meatballs, either on the side or in a crusty bun. I likely would add mushrooms in the bun as well. If you can suggest other ways to use these up, that would be great. Thanks for watching!

fresh and processed can't always be used interchangeably. I slice and freeze (then vacuum seal) the ones I plan to use as "fresh"

What kind of salt did you use?

I use salt that is not "iodized" for canning, typically sea salt.

so what is the texture after canning?

The texture is soft..as expected...today I mostly wash, slice "Vacuum Seal" and freeze green peppers..that's it..they still can only be used in cooked meals but they do retain more firmness and this method takes so much less effort.

Yes, You can grill them after thawing if you wish..
