Canning Chow-Chow and Freezing Bell Peppers

There is soooooo many veggies still in the garden and we are due for first frost in about a month. What to do??? Make chow-chow.
I actually had 25 cups of chopped cabbage, 20 cups of chopped green tomatoes, 10 cups of chopped onions and 10 cups of chopped bell peppers.
I used 7.5 cups of vinegar, 5 cups of sugar, and took all the spices for the recipe and times them by 1.5.
I ended up with 16 pints of chow-chow!!! We will have some happy eating this winter and I may have a few jars to give for Christmas presents.

Thanks. Can't have pinto beans without chow-chow!!! Fried potatoes, pinto beans, chow-chow and fresh baked corn bread. Now that is poor woman's Hillbilly steak! God Bless, Vivian Ann

I added chopped fine green peppers to a three bean salad my mom made and the frozen held up very nicely in the salad, my grandma used to call show show "PICK-A-LILY"

I am so proud of you! Congratulations! We are eatting 16 Bean Soup, with Fresh Ground Corn Bread and Chow-Chow for supper. I cooked the beans asand corn bread on the Pioneer Princess wood cook stove. Yum!

What a sweet lady you are and it was a pleasure watching your video. My mother used to make green tomato pickles. They were salty and crisp. Have you made anything like this. I no longer have my mother and would love to know how to make them. They were delicious.

Oh my gosh! Bless you and the dishpan and pig story! Those pans are hard to come by! Mine has a hole in it and sure need to find someone to fix it because they can be fixed. My grandma had one that had been fixed and used it forever. Love this video!

My gramma wraps green tomatoes in newspapers and puts in the root cellar. They ripen slowly. We have beautiful red garden tomatoes at Christmas !

Hi! I’m GraMMy Deb from Alaska! I am raised by grandparents from the south, and raised on chow chow, fried okra, pinto beans, mustard greens etc, which most I can’t get here. We have such a short growing season, and I wound up with a bunch of green, Roma tomatoes. While searching for chow chow recipe, I found your site. I immediately felt like I am family. I love your story about the hog and your pan! And found tears in my eyes when listening to your Penny memories. I am looking forward to watching your videos and learning from you. i also do celery, mushrooms and spinach this way; cut up and freeze and ready for quiche, western sandwiches etc.

Really enjoyed your lessons for Chow Chow as I found an old recipe from my Aunt, dated 1940. My Sister and I decided to make Chow Chow this year. We are both in our 80's and remember helping make and eating as a kid Blessings Eileen

Honey it is always a woman who saves the day. It was a woman who saved the Irish after the potatoe famin by teaching the women how to do Irish crochet lace to sell and saved the families from starvation.

Hilarious! I made 21 pints. I measured the tomatoes after they were chopped. I used large onions . Plenty of veggies. I had to double the liquid, but it turned out great, just have plenty to share.

Homemade chow chow, fried green tomatoes... Yummy.. I have another week or 2 before my bell peppers will be ready. Doubt i will have any for the freezer as he eats them as soon as they come in the house. :) Great video. Thanks Vivian Ann. Liked, commented and shared.

Martha Michloney ... Process by water bath canning for 10 minutes. Start the time as soon as the water with the filled jars returns to a boil. Happy Canning, Vivian Ann

Ah, Scotch Irish here, too, lol, Yum! Thank you for passing on your knowledge. Sympathy on your pan! My husband got mine and our German Shepherd banged it up! I was pretty sad. It was my grandmas, but it still works, lol. He won't do that again I hope! God bless.

Love your canning videos! I also love green tomatoes. I use then in place of tomatillos in Mexican food and pickle 'em up with dill weed, too. I'm gonna have to try making some chow chow -- it looks delicious. (I figured you were Scotch-Irish -- that's what I am. Watching you in your videos is sorta like watching myself, lol.)

This is something I've been wanting for a very long time. I wish that I had got the recipe from my great grandmother back when I was a young man and she was still here. I used to love chow chow with eggs for breakfast and watching you brought back so many wonderful memories of the past. I may try your recipe and see how it comes out. Does it make any difference what vinegar you use , the white or apple cider vinegar? Thanks for your videos. Really enjoyed watching you. God bless.

Hi! You can use the green tomatoes in bread as well. It makes a moist bread and you add cinnamon, and different spices. Very good! Made a ton a few yrs ago for Christmas gifts. Thank you for the videos! Blessings

Just LOVE your videos!! Thank you so much for sharing!! :) Do you happen to know how long you would process potatoes in pressure canner if you use the TWO QUART large canning jar? I really wonder why they make them if they are not safe to use! It's a great amount of potatoes for a family. Maybe they canned in them a long time ago, I am very new to canning, even though I am 71. :) Thank you! And one more thing...I love that you don't waste anything!!

No, I can Strike green beans. They are an extremely prolific bush variety that I originally purchased from Morgan County Seeds. I then save seeds each year. Good question! Vivian Ann on the side of the mountain in northeast Tennessee

I love your videos, just found you, I never know the name if this, I just so happen to head all that in my refrigerator one day and I decided to fry it up no potatoes though but that sounds wonderful with it my question and I'm praying that your answer is I have a very small family I don't need that many quarts of chow-chow how do I break it down where I would only need maybe four maybe five Courts at the most and how long can I keep that on the Shelf doing a water bath please answer me and God bless

Me again. I am just gonna rinse this till it's totally clean. It's gonna freeze here in Denver tonight and I ha e to get this done before then have to do it outside. One more quick question. I can only fit 7 8 to 12 ounce jars in my electric canner at one time. Do I fill all of the hot jars and keep them hot for hours till their turn or may they cool off in the counter and put them in later to process? Sometimes just the heat of the jar seals it. Can I still run it through the water bath? Thank you again!!!

I messed up, can you help me fix this? I out all if the ingredients in the pot covered it with water and let it sit all night. I didn't do the spices and things separate. This morning I poured off the water and all of the vinegar, sugar, salt, tumeric and stuff went right down the drain. Now I don't know how to fix this. My sachet wasn't in there, but every single thing else was. Can I fix this? Help me???

Tried to ask you about the jars when my canner can't hold them all. I can only do 7 8 to 12 oz jars at a time. Don't know if if I fill them all and they wait in line for their chance to go in or do I need to fill them as I go and keep reheating chow chow and the hard and do them then when it's their turn? If I fill them all at the same time and they seal on the counter can I still process them? I am absolutely lost all day. I just gave no idea how to fix this or the jar issue. Tried to send this comment before, a commercial came in and deleted my whole question so please know I am not being quick, but very respectful. Thank you so much Ma'am!

Yes, fill all the jars, place lids and rings on them and let them wait their turn. I keep mine warm in a roasting pan sometimes. Sorry it took so long to respond. My daughter has been critically ill and I didn't catch your question until now. God Bless
