Canning Green Beans with a Presto Precise Digital Pressure Canner

Pressure Canning Green Beans
-Fill jar with packed clean green beans (can add salt at this point if desired)
-Cover with hot water
-Leave 1 inch head space
-Process 25 minutes for quarts, 20 minutes for pints
* EDIT: I said in the video that the canner processes at 15 psi, that is incorrect. This canner is able to maintain the temperature at 240-250 degrees to ensure all bacteria is destroyed and takes care of the appropriate pressure to do so based on your location. Here is the correct information taken from the Presto website:
"Botulinum spores are very hard to destroy at boiling-water temperatures; the higher the canner temperature, the more easily they are destroyed. Therefore, all low-acid foods should be sterilized at temperatures of 240° to 250°F, attainable with pressure canners operated at 10 to 15 PSIG. PSIG means pounds per square inch of pressure as measured by gauge. The more familiar “PSI” designation is used hereafter in this publication. At temperatures of 240° to 250°F, the time needed to destroy bacteria in low-acid canned food ranges from 20 to 100 minutes. The exact time depends on the kind of food being canned, the way it is packed into jars, and the size of jars. Pressure does not destroy microorganisms, but high temperatures applied for an adequate period of time do kill microorganisms. The success of destroying all microorganisms capable of growing in canned food is based on the temperature obtained in pure steam, free of air, at sea level. At sea level, a canner operated at a gauge pressure of 10.5 lbs provides an internal temperature of 240°F."

Thank you very much for the detailed description of using the Presto pressure canner. I knew there had to be a way to fully utilize the warm cycle with only the empty jars. Your method was genius!! I’ve used mine only a few times so now looking forward to my next canning project! Thank you again!

Thanks for this close up description of the operation of this canner. I just bought one but haven’t used it yet. I appreciate your “no nonsense” video! BTW, I love green beans. Wish I had a garden!

Just got my new presto canner. I canned peas that came from Costco frozen. I used your method of using the warming cycle to warm the peas [after I rinsed the peas with cool water]. I have canned frozen vegetables before with my stove top canner this is so much better.

It takes a while. The longer the processing time, the longer the cool down. For 25 minutes processing it could be an hour or more since it's so well insulated.

Oh my, I get my jars filled, add lid and ring, put in canner and go through the pressure canning modes, haven't had a problem.

Thank you so much for watching. Yes, we have well water. I've been adding a splash of white vinegar to the canner pot and that has helped a lot with the residue in the canner and on the jars. -Jamie

So how long from start...very start...does it take to complete...after it depresses and all? Curious on the time from start to finish for 4 jars so I can plan accordingly. Your video was so easy to follow...just need to get a true idea of how long from start to finish for each set of 4 jars??

From the very start until pulling out of canner is at least 2 hours. With a process time of only 25 mins the majority of the canning time is actually in the cool down phase. I just did a canner load of green beans last week and it was closer to 2.5 hours start to finish so maybe set aside a 3 hour block for each batch just to play on the safe side of time management. Using a wooden chopstick works better as a de-bubbler when canning a dence food like green beans.

I’ve had people in facebook groups saying this canner is unsafe and not approved but the internet says it is USDA approved. I left both those groups because the people in them were extremely rude.

I've read the same type of comments in canning groups. I did a lot of research before purchasing mine. I encourage everyone to do research and only purchase and use what you feel comfortable with. That being said, I LOVE this canner and use it alongside my traditional stovetop pressure canner all preservation season. Thanks for watching. -Jamie

Regular mouth works just the same! I used wide mouth just because it easier to get solid foods out in the end and easier to clean. Happy Canning! -Jamie

I changed the water this batch to make sure the temperatures were all the same. I have reused the water before but added more to it to make sure the water level line is correct for processing. Just make sure the water is clear and no debris or liquid from the jars has made a mess. I hope this helps! -Jamie

How long did you wait between the two loads? Is there a cool down time for the canner? Thank you .

@denisesininger2978 the wait time was fairly short between these batches since I changed out the water. The canner itself cools more quickly without the hot water. Just be careful lifting it out and changing the water if you choose to do that. The water after canning is very hot. -Jamie

Thanks for the video. My first batch of beans turned out very mushy. Not eatable. Have you used any? How were yours? If it is 15 psi then that might be why they are mushy. Should be 10. I see that yours are quite dark in color and the water is dark- probably over canned.

We've eaten ours and they are great, very similar to store bought canned beans. I can at 11 psi when using a standard pressure canner and this at 15 and I can't tell a difference in texture. Maybe the variety of bean is what causes the most differences? From what I've read, the darker color is because we have hard water. I don't know if there is any truth to that though. -Jamie

@@joyhomesteadva Store canned beans are also a little mushy for my taste. But the ones I canned are much worse. I have eaten home canned beans canned in a traditional pressure cooker (same variety of beans) all my life and they are so good. So so so much better than store canned. I looked up the psi for this canner and they don't go by psi. Instead it maintains a steady 240 degrees. Still looking for answers to why they are so mushy. I guess I shouldn't have bought this type of canner. Very dissatisfied. Thank you for your response.

@karens300 My husband and I are now going down the rabbit hole of research on how this canner works. You are correct about the 240 degrees (I didn't know that part until just now). The canner is pressurized like a stove top canner but instead of a pressure regulator the digital canner is regulated by temperature. The pressure dictates the temperature, so this machine handles all of the necessary adjustments based on altitude. Ahhh, science! I learned something new today 😊 I hope you are able to find a way to preserve your beans. Do you have a stove top pressure canner for future batches?

@@joyhomesteadva No stove top canner and I have a glass top range so I need an alternative. I guess I could keep canning them at my moms house but she is 45 minutes away. I'm wondering if the extra long cool down continues to cook the beans.

I have a Presto stove top canner, and it's safe to use on my glass top stove. But not a water bath canner. Hmmm, I hope you are able to find a way that works for you.
