Yes, you can preserve citrus by canning it! How sweet is that! And how easy, once you get the fruit peeled and ready. These mandarin oranges are a high acid food and can therefore be canned using the water bath process. What a sweet treat to have preserved and ready on your pantry shelf in times of emergency when spirits need lifting and bold flavors are needed. Although some of the vitamin C is degraded in cooking, other nutrients are still in place, making canned citrus nutritious as well as beautiful and delicious. Try it!

I love how during a canning lesson you also teach how to be humble. How to be self reliant & sufficient. How to “wake up now” so to speak. I appreciate the kind candor you and Jim represent, the special family guests & their respectful fact based teachings. They’re awesome! Thank you for what you do! There is a process using Peptic Enzyme that will dissolve the membranes before canning. It is like what is used in making wine. The Inquisitive Farm Wife has a good video on using it when canning Mandarins.

Pam I wish you could see this, and your other videos, through a newbies' eyes. You and your husband are gold. The most important info you've shared is SAFE CANNING, and I'm grateful for it. This is my next fruit preservation project once I complete the Christmas jam, another 4-ish gallons of apples and something blueberries. My husband is a sucker for citrus, especially oranges.

Our granddaughter loves mandarin oranges. Every time she comes over she makes her way to the pantry shelf and asks to have a can of oranges. She has nearly finished them off so next time she comes there will be some home canned oranges waiting for her! Papa brought some cutie oranges home today so that will be the next project. You acturally got 5 1/2 in that jar. So in this case squauty pints will do just as well as the tall pints. These are much cuter. Never thought to canning cuties. Great idea.

I can a citrus medley that my family loves. It has grapefruit, mandarins, Cara Cara oranges, blood oranges, and Pomelo in an extremely light syrup. Because most of what I use doesn’t peel easily, I use Pectinase. It really helps! I peel everything the night before canning, put it in a pot with a mixture of pectinase and water, and stick it in the refrigerator overnight. The next morning all the pith has resolved off. A good rinse later and I’m ready to start filling jars.

Glad it helped! Four of my six children were born in Texas--two in Houston and two in El Paso! We are going to do another video on canning citrus showing a new product that I am now researching that will help dissolve the membranes so it won't be so much prep time! Stay tuned!

I was just thinking about my storage as well, wanting to put up mandarins and then your video popped up. I live in Florida and have many neighbors that have trees that drop their fruit . This winter I plan on getting a lot of free fruit to put up! Thanks for this video!!

I am finally getting around to canning some mandarins! I need to get the syrup ready. I found some Halos (very easy to peel) on sale for $2.99 for a 3-pound bag. I decided to section them and had enough for 4 pints. I used a straw to push out the pith inside and it worked pretty well, but then I decided that I would rather have the sections. If they are affordable this week , I will get another bag. Thanks again for helping us put good food on our shelves.

We just canned our first batch of these little cuties and we will be doing pineapple before the week ends. Our large family thanks you for helping us move toward food independence and security. I bought 3 4 lb bags of baseball-sized navel oranges ($2.98 at my local Winco store). After peeling and coercing, I have 11 wide-mouth pints of navel oranges ready to process. Each jar has 3.5 to 4 oranges. Thank you for the inspiration!

Peptic Enzyme ( you can find it where wine making things are sold). Add 1 / 8 the teaspoon per quart and soak for 12 ish hours or overnight . Shake and rise several times the pith will slough off easily. Preserve as directed.

Hello again....tuned in tonight and low and behold you were demonstrating canning mandarin oranges. I just this morning had the idea to can some myself, so will be doing so tomorrow. I too noticed the statement easy peel and said just as you did....they lied to us. Can’t tell you how much that I enjoy your videos. I too believe we must be prepared food wise as who knows what is around the corner for us. I am beginning to think that I might be part squirrel, with all this stashing of canned foods. Thanks again.

Thank you for another great video. I just came across a product called pectinase. It's an enzyme that breaks down the pith. You put the citrus in a bowl (separate the segments), cover with water, and add a few drops of pectinase and let it sit. The pith just rinses right off. I just ordered some to try...my elderly mother has a problem swallowing the pith. But it seems like a great use when canning citrus, which I would also like to try.

I've really enjoyed watching your videos. I've freeze-dried Mandarin oranges and just started canning after watching your videos! You have inspired me so much and even my hubby was inspired to pickle okra from our garden. I purchased a couple of bags of Mandarin oranges to can tomorrow! AND....thanks to you, my first experience with pressure canning was doing raw chicken! Now I've put up 25 pints of chicken as well as 8 pints of beef chunks! You are the best teacher! I've just canned my first mandarins and they are amazing .... I did one thing different and used pectinase to take away the pith as our variety of mandarins had thick pith... it was the best idea, well worth it for a less bitter after taste!

I need to get some of those racks for my pots! When I water bath can, I use rings from the jars themselves. Just extra rings and I had stored. It works pretty well, but I'd much rather have some little racks like that. Another great video! ❤️❤️❤️

I’ve ordered the racks from A. Just measure the inside diameter of the pot, so you get the right size.

I soaked my (pith peeled) orange peels in sugar for several weeks, then gently cooked them, and then put them into my yellow cake batter, baked my cake and it smelled SO PRETTY 😍 I iced it with butter cream icing that I put more orange peel in. I took it to a fellowship meal and had NONE LEFT !!! Good thing I divided off some batter to make a small cake for us, so we could try it

This is brilliant. I use a lot of lemon juice and have been wondering what I could substitute if I had no refrigeration. Canning lemons could work. I'm still working my way through your videos and will be looking out for the candied citrus peels. Again, such excellent information and presented so we'll. Thank you Pam and Jim!

I read someone’s comment on a blog that they put their grapefruit in the oven for 15 minutes before they peel them, making them easier to peel. I’ll have to do more research on that.

Thank you for so much for all your videos I have learned a LOT from them. I just made the canned mandarins. They turned out great! I discovered something while making them, quite by accident. I dropped one of the oranges in a bowl of water I had in the sink. When I took it out, I noticed the white stringy things were very loose unlike before. I took my thumb nail and rubbed across ridges on the surface of the orange, everything came off easily, so I finished the process by rinsing all my oranges to remove the white strings. Thought you might be interested.

I should have known !!!! If anyone would know how to pressure can oranges it would be you ! Thanks for posting this video. Mandarin and similar small oranges on occasion by me go on sale and I usually buy them, stick them in the fridge and forget about them. By the time I remember them they are spoiled or frozen.

Again, thank you. My sister has grapefruit and orange trees, I will be canning both this winter to fill both of our pantries. As a side note - I wish you had been one of my Professors.

What a lovely compliment--thank you so much. USDA suggests canning oranger with grapefruit together, but grapefruit can be canned alone. Not sure why--I am trying to track that down. But how nice to have access to citrus trees in your family.

My Mother was very particular about having the outside edge of the fruit against the walls of the jars too. That’s how I learned to can also. It does look beautiful lined along the shelves. I never would have thought about doing the Mandarins until I watched this. I wonder how much vitamin C is destroyed by the heat. It still is a nice treat to anticipate as a boost to the palate and up-lift the morale during stressful times. Good demonstration.

Thank you. Most of the Vitamin C in any food is destroyed by heat starting at about 80°F, which is why lots of products have it added after the heat process as in orange juice with added vitamin C. But I like you conclusion about it being a boost to the palate regardless!

I must say you are my inspiration. I’m 60 years old and this is my first year of canning. I have watched other canning videos but keep coming back to you. So now you are the only one I watch. Everything has came out great. But my canner doesn’t have a gauge so I’m not sure what I’m canning at. Any help with this? Love your videos.

Susie, if it doesn't have a gauge it should have a weight and the weights are calibrated at 10psi or 15psi usually. If you are at or below 1000 ft elevation use 10psi. Above 1000ft then use 15psi.
