As always, another superb recipe Chef Pasquale! You certainly tempt me with the recipes that have meat in them albeit they’re certainly delicious, but I must remain strong to my vegetarian diet and this is perfect for me! For those who don’t like Italian cuisine, they have serious mental stability issues lol. You’re the best Chef Pasquale!
I fell in love with this dish when I was in Sicily but always thought it was very complicated to make. This recipe was simple to follow and it tastes amazing!

Looks delicious Orsara, i do not know if it would change anything, but i should watch these recipe videos after i have just eaten, lol, instead, it seems i watch them when i'm hungry, or if not, i am now, lol. The really bad part is i usually have most of the ingredients on hand except one or two so i have to get off my lazy butt and go to the store to get them, will i ever learn ?, probably not, lol. Mi scusi Paisano.....MA...i make mine almost the same.....but I do not put tomatoes or basilico in the sauteed .. but I add diced celery instead I never enjoyed it hot....BUT love it cold on a hero...... not saying your is bad...just a little different from mine .but I have to say..... I enjoy watching you cook,............,great stuff...............BUONA FORTUNA

Pasquale, I just made this. It's still a bit warm, but it does taste real good. I didn't realize that cubed eggplant would cook up and taste so good. Love your youtube videos. I watch them all.
Love this guy! The Best chef I’ve been following for awhile. I will definitely make this during the holidays, he taught me how to make puttanesca and I think this would be a a good appetizer with that.

Saw a lot of people ask but no answer so the bread is what's known as a "Paisano Loaf" (peasent bread). As good as it looks but sadly hard to find outside of big cities unless you are lucky enough to have an Italian bakery or market. Pasquale is in Jersey, no hardship there! :) If you are into baking (Im Not, but my Father was) it's actually a simple bread and it freezes very well.
Hello my friend Pasquale, you are making this CoVid thing so much easier for me. I love to watch you cook, I tell you before, you remind me of my friend Nino, we cook like this alot. He make this like you and he teach me how to do, such a nice dish, even my cat, Sebastian, he's a Korat Cat, he no eat, but he Loves the Smell, then I give him fresh Tuna. Ok, chef, eggplant always confuses me. I was thinking before you put that back in we had a nice sauce for some pasta. Serve with fish, oh yeah. BUT you always make good stuff, so here's hoping! Bless you.
As always Chef , I love your recipes. But one time the eggplant skin stuck in my throat & made me ill. I ALWAYS peel my eggplant unless I’m stuffing it. Salute ❤️
Purple egg plant is so pretty but it is SO BLAND and soggy tasting. I have never had an egg plant dish that would not have been better with another ingredient other than eggplant
