cream of tartar 1 tsp
Caramel crunch:
sugar 2 1/2 cup
water 150 ml
light corn syrup 3 tbsp
baking soda 3 tsp
Caramel custard:
yolk 3 large
cornstarch 15 grams (2 tbsp)
sugar 2 1/2 tbsp (35 grams)
evaporated milk 250ml
Caramelized sugar:
sugar 65 grams (1/4 grams)
water 85 ml (1/3 cup)
evaporated milk 250ml
pinch of salt
butter 2 tbsp
Whipped cream icing:
3 cups whipping cream ( everwhip)
powder sugar 1/2 cup
powder milk 1/2 cup
Baking time: baking time 35-40 minutes (150°c)
depending on the oven.
