Ingredients:
Caramel crunch:
sugar 250 grams ( 1 1/4 cup)
water 150 grams ( 1/3 cup)
corn syrup 50 grams ( 1 1/2 tbsp)
baking soda 8 grams ( 1/2 tbsp)
Vanilla Chiffon Cake: (I used two 6x4 round pan) this recipe can make 4 layer tall.
yolks 5 large ( 105 grams)
sugar 1/3 cup ( 75 grams)
oil 50 grams ( 1/4 cup)
vanilla 1 tsp
water 75 grams ( 1/3 cup)
cake flour 1 cup (130 grams + 1/8 cup all purpose flour 20 grams)
salt 1/4 tsp ,baking powder 1 tsp
eggwhite 4 large (150 grams) 2/3 cup
cream of tartar 1/4 tsp
sugar 80 grams (1/3 cup)
Whipped cream icing:
heavy or whipping cream 2 cups (use 30% fats)
powder sugar 50 grams ( 1/2 cup)
Note: place the bow and whisk attachment in the fridge for atleast 1 hour before
using it for best result.
Note: chill the cake for atleast 35 milk before serving.
Oven temperature: 160°c
baking time: 35 to 40 minutes ( depending on your oven)
