One essential enquiry about the life is about the nature of its molecules and its behavioural diversification in its functionalities. For example, the Hexose Sugar D-(+)-Glucose is used by cells of our body to generate energy while its other stereo or functional isomers like D-(-)-Glucose L- Glucose or Fructose or Galactose are rejected by the body for the same things, this shows about the high specificity and selectivity of life processes taking place at molecular levels. Another contrasting feature is that the master of entire cellular programming, i.e the DNA and its baby child RNA not only reject D-Glucose but have adopted altogether a new Monosaccharides i.e Deoxyribose and Ribose sugar.. the bigger irony is even the distinct Pentose sugar between DNA and RNA, even though DNA itself synthesises RNA 🤔😎 My assumption is that the distinction in these molecular features could be happened essentially to avoid molecular chaos within the life processes. For example, let’s think what will happen if the master code of life processes ie the DNA and RNA use the same sugar, ie if DNA and RNA both use Ribose or both uses deoxyribose? Clearly, there will be a great chaos within the DNA and RNA, probably both will become indistinguishable at micro level or may fight with each other to establish their superiority over other. If molecules compete with each other to impose their superiority then ultimately the life processes will be compromised, this will probably cause early death of cells and hence the living beings. Now, think why do cells use D-(+)-Glucose than Ribose or Deoxyribose? Perhaps it could be because to avoid the molecular conflicts. If cell will use Deoxyribose or Ribose, it could be a devastating thing for their own existence as clever enzymes can pull them out from their chain/polynucleotide to produce energy in cellular oxidation. Ultimately, any such thing will end the superiority of DNA and will destabilise DNA or RNA or may rig its molecular chain to a great extent. This will be a life threatening events for the cell itself. This shows, the entire molecular designs of life processes are way more intelligent than our intelligent brain. Simply, life is intelligent or life is an intelligent phenomenon. It’s all about intelligence that we are being alive while non living are non motile and probably less intelligent than us.. our brain hardly reflects the 0.001% intelligence which is encoded in our DNA. it’s all about an enquiry of an intelligent mind.

It would be awesome if you did an updated nutrition lecture because I've noticed that some comments are a bit dated in comparison to the current literature on polyunsaturated and saturated fats. Very helpful videos though, thanks for making them available. I just want to make sure I'm studying accurate materials for my classes in 2024.

Professor, you believe that for eating less calories one has to consume polyunsaturated fats. To my, last 10-yr. knowledge, consuming polyunsaturated fats is dangerous, as they produce a lot of free radicals due to their high-level rancidity, because they are carcinogenic when heated, and because of the high omega-6 content in MOST of them causing inflammatory diseases. Your recommendation on fats in that lecture was the greatest Ancel Keys deadly mistake. Why not eating healthy saturated fats in SMALL daily portions, e.g., one-two spoons a day rather than 3-4 or more of polyunsaturated, among which are a number of highly toxic oils like Canola, Soy, Vegetable, and Corn -- the widely advertised and commonly used pro-inflammatory and carcinogenic oils. This "dogma" literally killed millions of Americans believing their physician "pseudo" knowledge. Monounsaturated fatty acids (like in olive oil) do not provide body with essential (not produced by the body) polyunsaturated omega-3 and omega-6 fatty acids in a healthy ratio. Therefore, among polyunsaturated ones only flaxseed oil and hemp oil can be recommended to be used in their raw unheated state (not for cooking). Vegetarian, though, as well as non- can use coconut oil as their healthy saturated fat choice of cooking.

They don't mean anything in and of themselves, but most pufas in the diet are rancid vegetable oil and highly toxic. DHA and EPA are also PUFAs, so the term ins meaningless in and of itself.

Thank you for making your lectures publicly available. I just would like to add that splenda has since been found to have adverse effects such as raising blood sugar levels and causing changes to the intestinal flora, which can lead to allergies and immune suppression. I'd go with your own advice to limit the amount of sugary/rich foods rather than going for generally understudied food substitutes. Thanks!

“I recommend you going to nursing school then watching this”, lol. I’ve been an RN for a few years & love these videos, many BSNs breeze right over these very important concepts. I would like to take one issue with what you said however, and I believe the root of America’s health crisis; I do not believe calories in saturated fats cause heart disease I believe (cholesterol&) inflammation of the vessels causes heart disease which is caused by frequent/overconsumption of carbohydrates and sugars! It seems every patient I treat with heart disease also has type two diabetes. Those patients livers are synthesizing high amounts of cholesterol from sugars. If our population it only ate Meats 🥩🍳🥓🍗🍔🥗🧀🥬🥒🌶🥦( aka saturated fats ) & vegetables many of our health conditions would go away including heart attack, stroke and cancer. Calories mean almost nothing when it comes to weight aka gaining & inflaming. That’s why the basic advice isn’t working when it comes to Americans being so sick.

Many other researchers & clinicians similarly attribute "Metabolic Syndrome" (CV Disease & Diabetes) with over-consumption of sugars AND INFLAMMATION. But then there is also evidence of the "hazards" of dairy & meat consumption also leading to INFLAMMATION. I'm rewatching this series 5yrs later and it is still an excellent source of information. I'd challenge some of the dietary advice that labels carbs and oils as superior to natural animal foods. There's a reason animal fat tastes good to us and there is a reason that animal foods are full of cholesterol as are we. It is because we've been thriving on animal proteins and fats for our entire evolution as sapiens 🥩💪🤙

Professor, you state in this lecture that saturated fats contain more energy than unsaturated fats, i.e., are more caloric. Yet, 100 grams of olive oil, for example, is higher in calories than 100 grams of butter. What am I missing?

This is an excellent question! The reason why 100 g of Olive Oil is higher in calories (884 C) than Butter (717 C) is because Butter is not pure fat (as Olive Oil is with a specific gravity of .911 g/ml). Instead, Butter is 70% fat and 30% water & milk solids (with a lower specific gravity of .86 g/ml). If these other components of Butter were removed, Butter WOULD be higher in calories per gram. This question shows the difficulty of comparing two very different types of foods. Great Question! -- professor fink

I think part of the answer is: (1) in the past, people died on average at a younger age from infectious diseases (for which we now have antibiotics & vaccinations); (2) people today are more sedentary in modern society; (3) today there is higher consumption of saturated animal fats & hydrogenated fats & sugar.

this has been well studied.....populations that live in cold climates and/or have very active lives and very high metabolisms burn the fats before they are accumulated to dangerous levels......modern cultures however are largely sedentary by comparision and have a high degree of obesity......they are not burning off the fat, they are accumulating it

The consumption of artificial sweetener like sucralose, although zero in calorie, has been reported to contribute to hinder fat loss by making our body think something sweet is coming to the bloodstream and stimulationg pancrease to secrete more insulin. What's your take on this proffesor?

I agree with your statement; recent studies call into question the use of "artificial sweeteners" as an alternative to natural sugars. This particular lecture was given to college students enrolled in Human Physiology by mostly Allied Health Science majors (incl. nursing, dental hygiene & respiratory therapy majors). A corresponding course for medical students in America would be significantly more detailed.

Dear Professor Fink: Time:15:39 Due to the inability of the human enzyme invertase to hydrolysis the sugar substitute "Sucralose", can we assume, that the receptors sites for the hydrolysis of the sucrose is at one or more of the substitute sites.

Yes. Even though it is made from cane sugar (sucrose), it has been chemically modified so that it can not be absorbed into the body. It provides 0 calories and is non-cariogenic; ie., it does not cause tooth cavities. Perhaps an alternative choice that is more "natural" would be the use of the natural sweetener stevia; however it is absorbed into the body.
