I made this today and I love it! In the top 3 things I have ever made. I used some fancy, organic and not very smokey thick-cut bacon instead of pancetta, otherwise all other ingredients as directed. One note of caution: saltiness of pasta water (I did end up adding 2 cups to final mix) is going to dictate saltiness of dish. Might be good to suggest some measurements.

Really nice twist on the fregola. In Sardegna is usually traditionally served with fish or muscles. If you’ve never visit Sardegna u should totally do it someday. I think you’ll love it. The sea is insane and also the food (like every Italian region🇮🇹)

Hey I love your show and recipes! I’m from Calabria and I obviously also love Calabrian chilies. But please, when you say we go to… for some Calabrian chilies, don’t say we go to Sicily… we go to Calabria! which is a close by but still distinct region of Italy! :)

If one cannot find fregula, I made a very similar corn/pasta dish with De Cecco brand 'Acini Di Pepe' which is a similar size/shape. I'm sure the texture isn't exactly the same, but it was wonderful!

OH MY GOD this is maybe the best pasta I have tried -- my grocery store was out of fennel but it doesn't even need it, it has so much depth regardless. I used harissa and tons of extra parm on top which was perfect. MAKE THIS ASAP YALL
