That looks great Arnie, your mom and wife recipe is excellent. Here in Tucson, you would be lucky to find a fajita as yours, our selection for good meats is very limited and if you are lucky to find it, the prices are outages. Wish I lived in Texas.

I love this dish. They serve it at a Mariscos by my house. Never seen it anywhere else. When i asked a hard core mexicano about it they looked at me like i was stupid
lol my ex-girlfriend used to give me hell when we ate Mexican cause i always ordered the same thing but hey if they can’t get th enchiladas right, i’m not going back there 😂

I go very hot oil. Use the tongs to to judge when the tortilla has only just begun to get too firm. Remove the tortilla and allow the excess oil to drip back into the pan. Then soak it in the sauce until it becomes completely soft and pliable again. The sauce reverses the crisp and firmness, if it's not too severe. This creates a nice, rollable tortilla that never rips.
WoW!! Look at those prices on that menu. These days, all those items are basically double of what those prices are. Anyways, everything looks delicious!!

"Queso Fresco", has always been a mystery to me. I see it all the time in the market. Thought of putting it on my homemade pizza like mozzarella. I asked a woman who was buying some at the store. She said, "It probably won't work". Mamma Tex, Concurs. It DOES NOT MELT!

Mann...Tampiquena's that I enjoy the most came with the soft beef taco, tostada, enchilada, rice, fajita , avocado ect...this dish is basically endless in combinations. I can't believe how the prices for this plate has gone through the roof after covid. $8.99 before $18.99 today for just the basic plate!!
