RECIPES:
Ingredients
For the Dough
100 g of walnuts
4 large carrots
4 large eggs
300 g of sugar
300 ml seed oil
1 teaspoon of cinnamon
1/2 teaspoon cloves
2 vanilla
400 g of self-rising flour
10 g of baking powder
For Ganache
200 g of cream cheese
200 g powdered sugar
2 vanillas
100 g of unsalted butter
Method
First, crush the walnuts in the food processor. Then we clean the carrots and pass them through the coarse grater.
In a bowl, beat the eggs with the sugar until foamy. Add the oil and work.
Along the way, flavored with cinnamon, cloves and vanilla.
Add the flour and baking powder to form a dough. Add the carrots and walnuts and mix.
Then, spread the mixture in a 28 cm mold with non-stick paper and bake at 170 degrees Celsius in the oven until golden brown. We check if the inside is cooked.
We continue with the icing for our cake. Beat the cream cheese with the flour and vanilla until soft. Add the butter that is at room temperature.
Finally, cover the cold cake with the icing and coarsely chopped walnuts.
