Ive made this..Its Amazing.. friends love it. Think of this.. You can use carrot cake jam in between layers of carrot cake with cream cheese. would make an amazing filling for jelly donut with cream cheese. Glaze a ham or use it on top of meatloaf..YUM
Looks delicious. I so wish I could eat pineapple( allergies) to make some. Quick Tip: turn your jar lifter sideways to hold your jar while you screw the band on, it fits perfectly, and no semi scorched hands. ❤
My mother passed forward her childhood favorite, cream cheese and jelly sandwiches. Fast forward, my kid (nicknamed Kid) is a self proclaimed "veggie-a-holic". At the age of 3 turned down a hot fudge sundae so she could have seconds of broccoli and cheese sauce. Her absolute be all and all favorite desserts now is carrot cake, or how she likes to put it "it's vegetables & frosting!". I am going to grab all the ingredients to make this when I go shopping and I am going to make this for her and tell her it's from my mother so that she could have her own twist on her Grandma's cream cheese and jelly sandwiches and still have her vegetables and frosting. I really was looking forward to making this after seeing the Kneady Homesteader make this but didn’t make because I didn’t have the fresh pears. Now I know I can use tinned pears! Yay! lemoncrinckles my Dad encouraged all of us the broaden our vocabularies and to not always use common words. Actually tinned describes it so much better since we use the word canning but we are really jarring the food not putting it in a can.🤓

I made this last night and the family LOVE LOVES LOVES IT !!!!!!! So love watching your videos, I've now canned beef, pork, chicken, sloppy joes, chicken soup (minus the noodles) wedding soup, onion soup, onion jam and more in a matter of days, I've been able to almost clear a small chest freezer !!! Your informational videos ABOUT canning are so very very insightful and needed by us "newbies " I've made basic strawberry jam but ONLY water bath. This is first year of having an actual canner and now I have two. Hubby says I'm addicted....Aren't we all :) Going to make your pepper jam today . Thank-you for teaching us ways, dos and don'ts and receipies as well.
Those lids are great. Much better than the junk being made today. The metal is thicker and there is much more rubber gasket seal. I've been using those since 2016 when Ball and Kerr went to the "Sure Seal" lids and everyone started have problems with lids buckling and popping off, sometimes weeks after the jars were canned. From what I've found out, they're from around the late 90's to early 2000's. I just bought 8 dozen off of ebay a week ago, all new and sealed for $30. This while people paying $10+ for a box of the new style lids.
I purchased 'Carrot Cake Jam' from a local lady at a Country Market near our summer cottage in Ontario Canada. She promised me it would be good & she did not disappoint ~ absolutely scrumptious!! She also made the best butter tarts around & the only ones my 98 year old Dad would eat. When she saw me coming she would start filling the bag ~ lol!! I have to make this one my husband absolutely loves carrot cake and remodeling my kitchen and dine but now we have to save some more money the wood has gone up 4 times more than what is was when we priced it before all of this mess started hope you have better luck on wood than we have here in Tennessee God bless you and stay safe
That looks so good. I hope your kitchen is done by Thanksgiving. 4 years ago I cooked an entire Thanksgiving dinner with NO running water except for the very beginning of cooking. Then the water came back just in time to wash dishes (All by hand, no dishwasher). Everything was good and no one got sick.

I am definitely going to make this!!! Yummy! I refuse my lids. Whenever I water bath can if I can get lid off with fingers, I can reuse lid!!! It works wonderfully with jelly/jams.
Love this jam, my favorite way to eat it is, bagel, cream cheese and top it with the jam. "Carrot Cake Bagel " - Been making lot of jam/ jelly lately, did a Christmas Jam , Cranberry raspberry jelly, using cran/rasp juice, apple pie jam, and a plain apple jelly using apple juice, and a jalapeno jelly - restocked till next year. Thanks for reminding me of this one, haven't made it in awhile,

Made a accidental variation that my hubby called Wassail Jam. I accidentally put in a whole teaspoon of ground cloves & then tried to take some out when I realized my goof, Lol. Anyway, left it in & proceeded. My hubby loves it! It reminds him of his buddy’s Wassail at Christmastime. Now the buddy wants my variation recipe to make it himself lol.

I just made this jam as my first go at jam or jelly. Came out really well but I don't taste carrot at all, just clover and a huge amount of sweet. Can this be made low sugar? I have no experience at this. Thanks and thank heavens you're helping us new folks. ❤
I believe you're right 💛 about the taste. It's yummy but if I can find a way to do lower sugar I think I'll do a tad less clover too. I can't tell you how much your videos have saved me in the midst of canning when I have an issue. I pull up your video and boom, you save the day.

Leisa...not a huge fan of pears, but raisins always go into my mom's cake. Can I substitute raisins and, if so, how much would you recommend? BTW, I adore your Fiesta Jam!!!
Could you add more carrots and omit (or at least decrease) the pineapple? I wouldn't put pineapple in a carrot cake. Or, could you add some banana and turn it into Hummingbird cake Jam? Would that still be safe to can?
Hi I’m from the U.K. can you tell me why you water bath the jars. With that amount of sugar this jam is well preserved without having to water bath it. Is there a particular reason you do this I would really like to know and learn as in the U.K. we don’t water bath our jams or picking as the sugar and vinegar do the preserving for us. It’s looked great and I’m definitely giving it a go for gifts. I’m naming it Christmas carrot cake jam. 👍🏼
Hi- my husbands absolute favorite dessert is Carrot Cake, BUT, he is not a fan of pears... would it do anything to the chemistry of the recipe if I were to measure the pears and then hide them by throwing them in the food processor? (You know- like we have to hide the veggies from our kids! 🤣)

I used to make an apple pie breakfast jam was what I called it. It had shredded apples and maybe apple cider it had raisins and it had apple pie spice. Has anybody made something similar? I lost my recipe I had it written on something stupid probably and it got thrown out! But if anybody has done something like this or can provide just plain old directions I can put the thing together I think. It was Uber delicious! :-)
