Yep! If it’s for the biscuit dough, use almond extract - and for the cream or coffee dip you can use other sweet liquors (rum, marsala, etc) or just skip it if you want non-alcoholic version :)

Hmmm there are ways but easiest option would probably be to try and make a different type of biscuit. Look at making savoiardi (lady fingers) instead, which has egg, flour, sugar, vanilla. And pipe it into a circular shape.

I wonder why egg yolk was added to the mascarpone mixture. You'd be eating this raw, I wouldn't recommend adding it.
