Dog fish is sold in London as rock salmon . Try poaching it in some milk and onions and a bay leaf then when cooked make a cheese sauce with the milk and some flour and butter and plenty of cheese then pour over the top and bake for 15 minutes
Dogfish was traditionally popular in the chippies of the East Yorkshire coast, where it was known as 'Scarborough Woof'. Don't know if they still sell it - pity if they don't.
