Decent fishing continues. With a couple of not so great striper trips I decided to try my luck on the speckled trout again. I rigged up the new chartreuse whiptail (link below) and a 3/8 oz Kalins ultimate and went to work. Short pause and jerks along the bottom accounted for a limit.
The dip was made the following way:
1 Speckled Trout filleted no bones (16"-19")
2-3 Tablespoon Cream Cheese (I used whipped)
2-3 Tablespoon Sourcream
1 Teaspoon Mayo
1/4 cup green onions
1 tablespoon oregano and or parsley
1/4 cup shredded pepper jack cheese
Cook trout on stovetop, mix all other ingredients. Remove trout, pat dry, cool for a few minutes then crumble into the other mixture. Spread mixture into a small pan evenly and top with your own favorites, I used pepper jack + jalapenos + chili powder. Bake for ten minutes, broil for 5.
