I'm from Chalmette. Went to Chalmette High School. My mama used to go to the Los Islanos festivals. She taught classes in Tinnereffi (SP) Lace. I got a 100 gross ton Captain's license but couldn't get a job so left the state in 99. Had a house in Violet. ok ok ok hes right but still a little wrong... use 2 pots... boil in one with plain water .. and season your second pot and mix the season well keep it at ambient temperature.... boil shrimp in the clear water untill the shell pops of the back... then soak in your seasoned pot ... shrimp will not over cook this way,,, If shrimp do not take season well (jumbos shrimp can be hard to take season) you can re boil them till they flat and re soak them ...they will not over cook... DO NOT USE ZATARAINS fot this it will be way to salty! Louisiana works very well for me ... and add a little sprinkle on top
Gulf Coast shrimpers are getting sold down the river just like catfish in Mississippi. Cheap imports are klling us. Mssissippi was the catfish capital of the world. Not anymore. Catfish from Vietnam, shrimp from South America and frozen crawfish tails from China. "Boudreaux's"Crawfish tails are from China. Buy local.👍
