Cauliflower Fried Rice. Excellent Low Carb fried Rice

Cauliflower fried rice is an excellent, low carb alternative to regular fried rice. I'm going to show you how to make your own cauliflower egg fried rice at home.

Ingredients:
• 2 tbsp vegetable oil
• 1 onion peeled and diced
• 1 clove of garlic - peeled and minced
• 1 red bell pepper deseeded and finely chopped
• 2/3 cup (115g) frozen peas
• 1/2 tbsp sesame oil
• 300 g cauliflower - about 1 large head, grated/riced
• 2 eggs
• 2 tbsp dark soy sauce
• 1/4 tsp salt
• 1 tsp lemon juice
To Serve:
• 1/2 bunch of spring onions/scallions chopped
Instructions
1. Add the oil to a large wok. Add the onion and cook, stirring regularly on medium heat for 5 minutes until the onion starts to turn soft and translucent.
2. Add in the chopped red bell pepper, garlic and peas. Cook for a further 2 minutes, stirring regularly.
3. Now add the sesame oil and the grated/riced cauliflower and turn up the heat to high.
4. Use a spatula to toss everything together and to ensure the cauliflower doesn't stick to the bottom of the pan.
5. Once the cauliflower rice is hot (this will take about 3-4 minutes), push the cauliflower over to the side of the pan and crack the two eggs in the space. Add a little splash of the soy sauce to the eggs.
6. Making sure the part of the wok with the eggs in is over the heat, fry the eggs, giving a mix with the spatula until the egg starts to cook and look scrambled, but is still a little runny.
7. Now mix the egg into the cauliflower rice.
8. Pour in the remaining soy sauce and sprinkle on the salt and mix it all together.
9. Add the lemon juice, stir and taste. Add a little more lemon juice if required.
10. Divide between 2 bowls. Top with spring onions (scallions).

As asian I'd it's say it's 80% as good as rice but double the amount and half the calories, it's real good.

Thanks usually I like Asian fried rice the most. I couldn’t tell if it was good or not because most white people grow up cooking food differently.

I just finished cooking this, and now eating it... THANK YOU, after a year and a half on keto, and 45 kg lost, I can finally have "rice" again. Actually, this is far better than rice! (I used shredded olives instead of peas, and extra virgin olive and coconut oils, also coconut aminos+turmeric instead of soy sauce, and some cayenne pepper to give it some "punch")

Great substitutions! I use Bragg's Aminos, in place of soy sauce. I sometimes like a touch of ginger as well.

@@KatTheScribe I make "fried noodles", too, but instead of noodles, I use either sliced cabbage, or if I have time, make noodles with sesame + cumin seeds flour, using a grinder. I fry it in grassfed lard or tallow, or coconut oil, and always finish it paprika. Some days ago, it was my birthday..., Wasn't going to take having no cake, so, managed to make my own chocolate cake, it came out INCREDIBLE, no flour, zero sugar, low carb. And without looking for recipes. If I had time, I would upload my own recipes, next on my list are making low carb Argentine Empanadas, Keto Dulce de Leche, and Keto Paraguayan Chipá (cheese puffy rolls)

First time I tried making cauliflower rice I used a box grater like she did. Never again. Take my advice just wash and chop up the cauliflower into chunks and pulse chop/grate in a food processor. So much quicker and less mess. Hand grating takes forever and little pieces of cauliflower fly all over. I also washed my cauliflower and let it dry in a colander for a half hour before processing. I cook it in a large cast iron pan with a tablespoon of olive oil with the cauliflower spread out in a thin layer. This prevents and sogginess and the cauliflower from steaming and get soggy. With a thin layer you are essentially drying it out slowly over a low to medium heat. Then after about 20 minutes I stir in any seasoning and butter to flavor or whatever sauce I want for flavoring. It comes out perfectly nice and firm and not over cooked and not mushy or soggy.

I used to hate cauliflower but frying it totally transform the taste and smell! This recipe is amazing and you can use it as a replacement for rice, potatoes, pasta and it's alot healthier! It more or less saved my keto diet progress

When you add so much vegetable oil youre just making it unhealthy again. Without that much oil, all that rice is maybe 200 calories tops? But you add all that oil and its getting close to 500 calories. Let alone vegetable oil you should not use that much oil especially when you intend to make a healthy fried rice substitute. Oily fried rice tastes better but its not worth it having 2x as many calories

This was absolutely outstanding! I made a big batch and had about half left over. Traditional fried rice doesn't reheat well. The rice always gets hard. But this reheated beautifully. I left it in the same pan as I made it in and I didn't even have to add any oil. It may even have been better the next day. You would never know this was cauliflower instead of rice. Definitely a keeper that's going in my rotation! Thank you! EDIT: I've since made this with diced cooked chicken and diced cooked pork. Excellent!

I've been serving cauliflower with spicy sauce dishes for years as a way of cutting down on carbs, and this is the first time I've come across a recipe. I'd never thought of grating it and doing it like fried rice, can't wait to give it a try. Lots of easy to follow, practical videos, thanks!

I tried making this tonight, and while it was tasty enough, I just couldn’t get it to dry up like fried rice. It still had a general soggy quality to it, which seemed to dull the spices quite a bit and also keep the dish from capturing that elusive fried rice feeling. I wonder if my issue had to do with not turning up the heat for long enough, or the fact that I wasn’t able to cook in an actual wok. Have you ever run into issues of things not crisping up enough?

I know woks need to be really hot to steam off the moisture as your cooking, you should hear it crackling for sure. Hope this helps

Lots of people put the grated cauliflower into a cheese cloth or something to squeeze out the excess moisture before cooking.

I put the grated cauliflower in the oven 200 degrees F for 5 minutes then stir it up a little put it back in the oven for another 2-3 minutes then ready to cook for fried rice/ cauliflower.

It's a dark orange colour. It's likely organic, free range, and a well-fed chicken. Therefore, more nutrient dense than the battery chicken eggs. In the UK we have better quality eggs than the US.

This isn't really that low carb. Yes, the cauliflower rice makes it a lot lower in carbs than traditional fried rice, but adding those peas really hurts this recipe. And you use way more of each ingredient than you need to. 1 cup of peas is about 14 net carbs. Now factoring in that cup of diced red bell peppers, which is about 5 net carbs, and those diced onions (which I'll estimate was about a cup or more), that's about another 6 net carbs. So far we're looking at about 25g of net carbs before adding in the cauliflower rice. Once the cauliflower rice is accounted for, which looked liked about 5 servings you used -- a serving being 3/4 of a cup -- we're adding in another 10 net carbs. The soy sauce was likely only about 1g of carbs, so not much there. Eggs are 0 carbs. But all in all, this dish is an estimated 36 net grams of carbs. And based on the serving size you put on those plates, I would have to estimate close to 15g of net carbs per plate. Which is fine if you eat nothing else with carbs in it for this meal... or much of anything else throughout the day if you're on keto. I would suggest cutting all the ingredients in half and maybe even cut out the peas altogether. I make fried rice all the time. I don't use peas, and I find that one 1/2 cup of chopped yellow onions or scallions and one 1/2 cup of chopped bell peppers is more than enough to make four servings of the fried rice (using the 3/4 of a cup serving size of the cauliflower rice as the basis). I also add in shrimp or pork or chicken, which are all 0 to near 0 carbs. My entire dish comes out to about 7 net carbs, which I eat two servings of. So that's 3.5 net carbs for my rice.

Not everyone's doing keto, this is still significantly lower carbs than plain white rice. And ofc as you said you can always omit the more carby veg or switch them for broccoli or whatever

Just chop the cauliflower into small pieces and throw it in the food processor. Much easier, much faster, and no possibility of grating your fingers in the process. 😸

I’ve only ever seen yolks like that from home-grown free range chickens - the ones I buy from a local grower look just like that! They’re usually found for sale at the side of the road in rural areas.

Eating carbs / rice for me means my weight will go up 3-4Kg in just one week. I’m so happy I discovered cauliflower rice, yes it’s not the same thing but I would say it’s 60% similar to regular rice

I didn't use fresh cauliflower but frozen and I didn't like the taste at all. I know very little about cooking healthy foods and I'm not sure what I did wrong, but my cauliflower looks very different from yours lol... this is why I cook the unhealthy.. much safer, always good. 😫

since making a massive amount can you potion it and freeze it. if so once take out freezer how long to heat back up.

I think a tblsp of soy sauce has like 1000mg of sodium so be careful

Despite my previous problems with cauliflower, I'm going to try this as it just looks so good. If cauliflower doesn't work for me then I will research an alternative. Great recipe though.
