Rob, you can get better RAM usage with a simple tweak in ESXi host. Disable the large page behavior - go to Configuration tab > Advanced Settings (under Software) > Mem > Mem.AllocGuestLargePage > Change the value from 1 to 0. Give it an hour or so to settle in.
Yep, did that a long time ago. Its hard to get RAM utilization to calm down when you have 50+ VMs running, but this is a lab server so I'm not concerned much with performance.

You lose some functionality in XRv9K. L2VPN in the control plane does not work at all. I haven't tested the 9K in EVE, only in VIRL and just some basic stuff. I can't really give any advice or otherwise.
