Cempedak is an exotic fruit found in South-East Asia. In this recipe, we not only tossed cempedak fruit pieces into rich butter cake, we also pureed the flesh to get even more flavour into the cake. It's no wonder the result is an insanely fragrant, moist and delicious cake!

I made this today but made some improvisations..I used cake flour instead of plain flour. 170g of sugar ( half white castor sugar,half light brown sugar). I also added 1 1/2 tbsp of milk powder. Baked it at 160°C for 1 hour then increased to 170°C for 5mins. My cake turned out moist and fluffy. Thanks for the recipe!

Tip:- make sure you use softened butter at room temperature. Do not overbeat your batter. I beat mine for about 5mins until it turn pale and creamy. Incorporate eggs 1 by 1 at low speed. For the dry ingredients I didnt use a mixer but instead used the folding method using spatula as I was afraid I would have overmixed it. Every oven is different so it is always useful to have an oven thermometer to monitor the temperature. I have 2 ovens, my old one doesn't work well ( heat not evenly distributed and the timer doesn't work) which has resulted in lots of failed experiments. My smaller oven works fine except that the heat runs pretty hot so which is why I use an oven thermometer to ensure the temperature is correct. Preheat your oven before baking and once you've put your cake inside the oven don't open the oven door. Leave it. Once it has baked after an hour, take it out,insert a skewer in the cake ( to check whether it is fully baked or not) if there are remnants of batter sticking onto the skewer meaning to say that it isn't fully baked.

Hi, thanks for sharing your recipe. I tried it today but it seems a tab bit oily and cake didn’t rise much. Is the measurement for butter stated correctly?
