I’m a momma of teens now but not too long ago I was doing alllllll the things like you with two littles on my hip. They were exhausting but rewarding days and now I have two teen boys who love gardening and raising animals and running tractors, cooking and all that. They do a lot of the projects now and I get time to sit and watch Becky!

Hi again Becky. If you grill pork chops you can cut your peach in half remove the pit and place them cut side down on the grill on low flame. Try it out. Enjoy....

I just spent the entire day shucking, parboiling, and cutting sweet corn off the cob and into freezer bags. I live in Iowa, and we put up enough sweet corn for a couple of our families for the whole year. There is NOTHING that compares to Iowa's sweet corn. 🌽 🌽 🌽 💛

I agree. I am also from Iowa. We grow sweet corn and put up enough for two years or more each year. You never know when there will be a bad year, due to the weather.

Girl ... Im new ,...... so jealous...this is the homestead I dream....... congrads on accomplishing such an idealic spread. Your garden bed garden would be perfect for my own physical needs at present time. I love playing in the dirt.... your blueberry patch is so cute and very nostalgic. My grandma was a master gardener and a work horse. Shed build stone walls, with 2 arms and a wheel barrow, would level any properties she inhabited, making sure the lawn was level, thick and green. She lived with our family. I was nanas lil helper. She had a collection of jars , containing ingredients that you only dare opening the once ..lol. I just want you to know how much your videos mean to me and I am hooked......Looking forward to future episodes

Now I know this was a full sized video. For some reason I feel like it just wasn’t enough for my ‘Becky fix’. Becky, you make it all seem so easy! Yes I know it sounds crazy. Maybe 🤔 I’ve been anticipating the preservation videos for so long. Idk. I just slowed down preserving my garden (187 jars added to my shelves Woohooo) not done yet though. Definitely over/past the ‘overwhelming’ part of the season enough that I can enjoy videos again. Becky I hope you know how much of an inspiration you are to this community around the globe. I take my crystalized honey in my Kitchen Aid and make whipped honey, whip until it turns white, put in a jar and use just like regular honey. It stays soft once whipped.

One more time Becky, and I pray you read this because it’s like the 4th time I’ve typed this out. I buy organic local honey in 1 gallon plastic jugs. I used to buy the gallon size from Azure, but I now have a local hookup. Anyway, when your gallon crystallizes, simply set it in your instant pot with enough water to cover maybe an inch from the bottom, and set it on WARM. Put the plastic jug on some kind of trivia/rack or 3-4 canning rings so it’s not touching the instant pot directly. Before you know it, all will be honey again. PEASE READ THIS! Every time you mention your crystalized honey, I’m over here screaming at my iPad. 🤪

You can also use the oven light to melt the honey crystals. I've been doing this for many, many years. My oven gets to about 100° wit the light on. I just put a wooden spoon between the door so that it doesn't get too warm in my oven.

She wasn't complaining about the honey being crystallized, just stating why she wasn't running to get it because she didn't want mess with it just then. I actually wouldn't heat anything in plastic in my instant pot. The chemicals leach out of the plastic and into whatever food you have in the container. I'd melt in it warm water and when back to the right consistency, pour it into glass jars so it's easier to deal with.

This is just an FYI for those trying to grow sweet corn… One of the biggest problems with growing sweet corn is not growing it in a large enough patch, and/or wide enough patch. No growing in a few rows, because the wind and breezes are what helps pollinate it. If it’s in just a few rows, the wind just blows the the pollen out into the nether, leaving the eventual corn small and sparsely filled…sometimes bare, lol. Another common problem is not feeding it enough. Corn is a heavy feeder.. I was raised on a farm surrounded by corn, and my brother and I even sold it uptown from the back of my Dads truck. And yet… When it came to my own first couple attempts at raising sweet corn, I failed miserably and had dwarfed skimpy corn. My Dad pointed out that I was trying to raise corn on a postage stamp sized garden… ouch! 🤭

I saw a trick this week. If you cut the peaches around the circumference rather than stem to stern you can twist the peach in half to pit them. The pit is oblong so that works so much better.

Hi Becky, I wanted to share something that might be helpful based on my experience managing industrial kitchens. This is a common oversight for home cooks, so it’s totally understandable (no judgment at all!). When preserving larger quantities, though, it’s important to be extra careful with hygiene. For example, when handling unwashed vegetables like those beautiful home-grown onions, it’s best to use a separate knife, cutting board, and bench space, or to clean cutting board, knife and surrounding area thoroughly before using it for anything else. I noticed you used the same knife to score peaches right after handling the onions. While putting the peaches in hot water helps with peeling, it’s not long enough to eliminate potential contaminants introduced by using the same, unsanitised bench space and knife. Soil and compost can carry spores and bacteria, which is a food safety concern. I just wanted to point this out to help ensure everything stays safe and delicious!

Cornmeal doesn't go bad on the shelf and the unit price can be so, so much cheaper in bulk over that found on the grocery shelf. It may mean you make more cornmeal mush, yellow grits, cornmeal pancakes, polenta, corn pudding, cornbread, sweet cornbread or muffins, corn bread stuffing, and on down the line.

Growing up in Maryland, we had a beautiful peach tree in our yard and every year my Mom canned and did everything peaches... Peach Cobbler was my favorite. Becky, something you can do istead of a towel in the bottom of the canner is you can take some of the jar rings and zip tie them together and sit them on the bottom of the canner as well. It works very good. and it is a cheap alternative. You just use however many rings you need to reach around the bottom of what ever pot you are using.

I love canning peaches! We have an amazing local peach farm! This year I kept the skin and pieces I squished and made peach juice! Other squishy ones I made a fall spiced butter and a whole lot of canned halved, quartered! Very little waste!

@@Cookingwithapril super easy! I used the pieces I cut bad & the skin (no pits, they freak me out!) cover with water-bring to a simmer then put through a cheesecloth for at least a few hours. Taste, add sugar as desired, bring to 190 and water can. It’s in Ball’s book of canning (look under juices) I’ve also made blueberry, blackberry and one of my favorites strawberry! I don’t add sugar but I use them in mimosas or mixed drinks. My grands love it with a little sparklie water too

When I was young, we had 4 or 5 peach trees in the backyard. August was peach month. Mom, I’m hungry - eat a peach! When we had eaten all we could, mom would can the rest and we had jars and jars of peaches to eat over the winter. One of many things I didn’t know you could buy in a tin can until I was in college. Thanks for the memories.

I grew up on a farm in Yamhill and believe the peaches grown in this area are some of the best. Mom was a great food preserver and I have many good memories of helping her and learning the craft - from strawberries in June to apples in September. Thanks for bringing these back. Been on the Big Island for 26 yrs and I miss the summer food abundance but not the weather. 😊

Becky, Meg, at Hollar Homestead has a "waterless" canner, that she loves. No heating g heavy water filled canning pots, less (no) time heating water to a boil, fewer gallons used all around. Just a thought. Happy preservation😅

It's not waterless, it's a steam canner. It takes 2 1/2 quarts of water and can replace a water-bath canner for many recipes.

Put your crystallized honey in the dishwater (in the sealed container) and when the quick cycle is finished it will be back to runny and crystal free

Happy Sunday everyone. I am fermenting some carrots today with jalapeños and garlic. They stay super crunchy with the tannins from a few bay leaves. My husband likes them with Franks Red hot buffalo chicken wings and ranch. It’s easier than canning.

It's wonderful to see how you use your garden produce. My garden isn't as big as yours but I'm very proud of the fact that I canned Cream of Celery Soup Base that used all ingredients (except chicken stock, which was home canned) from my garden. Garlic, celery, potatoes and onions.

I just freeze dried a tray of cilantro because of your suggestion. It was my first time freeze drying anything and I'm hooked. I have a medium sized Harvest Right Pro. I did 2 full trays of cooked pork shoulder carnitas, 1 tray of rotisserie chicken chunks, 1 tray of green onions along with the 1 tray of cilantro. 😊 I've been watching you for years and you're the major reason that I bought a Greenstalk and a freeze dryer. I have another rotisserie chicken to break down to make broth with the skin and bones and freeze dry the meat. I've got a long list of things to freeze dry including some caramel M&M's.

Hi Becky, just wanted to warn you from this side of the world, where we are told that honey shouldn’t be cooked or heated as it destroys some of the nutrients and enzymes in honey, and can even be harmful. So maybe you should mix in the honey after the granola is baked and cooled a bit. Adding honey to hot tea is also not advised here, and we usually wait till the tea is only warm. I may be wrong about this, so please do your own research as well.

I recently was perusing my Ball preservation book and made the Cherry Chocolate Jam? OH MY GOODNESS. You might consider it. You don't need much. It's rich and delicious and has been used in our house on toast/muffins, in yogurt, over ice cream stirred into coffee (I mascerated the cherries to the point of no chunks). AND I did it with pitted dark cherries not fresh and the very best cocoa I could find. Honestly, try it as a treat and also gifts!! Thank you for all your inspiration.

@@Meeminator603 I've made the sure jell version of chocolate cherry jam many years ago, and it was delicious 😋! Their recipe called for squares of semi sweet chocolate if my memory is correct. It was a long time ago. I don't eat jams or jelly because of the high amounts of sugar. I'm a diabetic, and yes I know about low sugar recipes from Pamonas and sure jell. I was not much of a jam/jelly consumer.

You can whip your crystallized honey for 5 to 10 minutes with a stand mixer and it will stay smooth ,airy and delicious! 0:37

We love to half and pit our peaches, put a pat of butter, cinnamon sugar and a drizzle of honey. Broil until carmalized. Serve with granola and yogurt or ice cream.

We get the banana peppers pickled whole with the stalks on in our supermarkets. They use them whole on top of donner kebabs in the restaurants

Becky you can use the rack from your pressure canner in your stock pot. I do that - or just use the canner without locking the lid.

I freeze dried my corn last year and I’ll never do it any other way. Tastes every bit as good as frozen and is shelf stable.😊

If you take and soak your peppers in pickling lime it will keep the crisp and all you need is vinegar...and then hot water bath.

Becky, lovely granola recipe 👍 if you pop your honey containers into hot water or into the microwave for a few seconds the honey will all come out of the container without having to wait until it runs down to the bottom👍

my honey comes in a glass pot and I put it in the microwave to decrystallize. if it's not microwave safe, put the jar in a sunny windowsill, works great. have you tried freeze drying pumpkins as a snack? or peaches/apricots or blueberries?

I blend a jar of peach salsa with a brick of cream cheese and it makes a great dip. Add as much salsa as you want. Delish

When I have a pickle recipe that has a multiple ingredient brine and the produce is trickling in too slow for a full batch, I mix up a full batch of brine and keep it in the fridge. It makes it easier to do small batches of pickles with less mess.

I love the medley you get as appetizer at Mexican Restaurant....pickled onion, carrot, and jalapeno. I think that would be a great thing to have in the pantry

On my shelf is last 3 qts of cauliflower, onion, carrot, cuke chunks...in 'bread&butter' pickle brine. Also bought pickled yellow squash, also 'bread&butter' pickle brine. ❤ mixed pickles.😊
