An ESSE cast iron range cooker is designed with patented oven elements. These wrap around the oven and deliver extremely even heat transfer into the food and the oven walls where it is radiated back to the food. Most compare the oven to a fan oven, which is believed to be more efficient, but it isn't so clear cut. Once the food in the ESSE oven has reached the same temperature as the oven, the minimal heat losses from the ESSE mean that it can switch down the power simply to maintain that temperature. The fan oven, by contrast, is having to produce constant hot air which is also vented out of the oven under the pressure of the fan, thus losing heat. ESSE oven vents allow moisture to escape at its own pace rather than assisted by a fan. Or, you can choose to close the vents when not using the ovens, to further conserve heat, or when baking to create a more moist oven atmosphere which is an advantage for some styles of cooking.
