Creativity is key, here are 2 of my personal favorites I've used: So a dishwasher is in the break room, not on break, and on his phone, he claims to be waiting on the bathroom. I'm a pasta cooker and my pasta bowls are the same pasta bowls used by Sauté for some of their dishes (most really.) and I'm out of pasta bowls after finishing 3 orders and dish already knowing the whole line is low. Sauté can't afford to let me have 4 of their last 15 plates, so I go to the guy in break room, ask him if he'd like some pasta. He says yes. I take 3 strands of fettuccine and lay it on a paper towel, the dry coarse kind for drying hands in bathrooms, I put 2 ounces of alfredo in a little cup (they're called ramekins, typically hold 4, but only server 3 as 4 is close to the rim, now you know I guess) anyways, I put the pasta in front of him on that paper towel, and dump w ounces of alfredo on 3 strands of fettuccine, and ask him if he'd pay $16.99 to eat off a fucking paper towel. He says "no, I wouldn't." I say "then start cleaning some fucking dishes, we have literally 3 left now! I'm not being paid to sit on my ass, nor are you, I'm not being paid to be a Haitian translator (he's the only white guy in shift with Haitians who are only fluent in English enough to fill out a job application) and have my shoes soaked, but you are being paid to spray some water on fucking plates, so please, get off your ass, THIS ISN'T A CALL CENTER!!! the first personal favorite was a long one because background was needed, the 2nd one isn't going to be long. Working as Expo (person managing the service crew and trays and also informing cooks of any fuck ups, dropped plates, customer changes, and acting as middle man for service and culinary communication) a grill cook made the steak for a Steak Gorgonzola, the Sauté guy did his job well with plating, the Grill cook puts some balsamic vinaigrette on there and passes it to me, the steak is dry, dead, and belongs 6 feet under. I ask the Grill Cook to come look through the window for a second, I say to him, mate, do me a favor and recook the steak, use the same pasta and plate though Sauté, we're already going to be 7 minutes behind and this food is drying over here. "Why does it need to be remade?!" "This looks like shit, stop taking one on the line shit and go to the bathroom next time you need to do that, this is dry as hell, are you constipated? We have some Pepto Bismol in the office if you want some. Recook this now. I could make leather baby shoes out if this! Come on man, you can do better than this."
