I wonder what he means when he says "a little seasoning" at 3:35? I really like this guy, though! First tolerable, doable recipe for shrimp & grits that I've seen. The info about white and yellow grits was helpful too. Chef Randall had me smiling the whole time.
Look I am a n expert in Shrimp and Grits from the South. MizBob from the Soul of Southern Cooking knows it's not until you can cross the South, with a tad bit of New Orleans mixed with a lot of Low Country is it the perfect dish. It will never get better than this. Good Cooking and Good Eating!! Hats off to Chef Joe Randall.
Chef Joe's recipe looks good and tasty, and it may be simple compared to some versions, but this is clearly a post-1985 take on shrimp and grits. This recipe can't possibly be anything like the breakfast dish that sailors and fisherman had in the Lowcountry going far back into the 20th century. Someday I'd like to see a chef take his best shot at recreating that original recipe, which must have been truly simple.
I have been looking for a good Shrimp and grits recipe. I have watched over 30 different videos on how to make them and this is probably the easiest and best that I have seen!! Thank you Chef Joe!! New Sub!!!
I love those chefs from the south of the US. They just use butter, bacon and cheese so lavishly and not feeling guilty at all. "Butter never hurt nothing..." My cholesterol ist rising just by watching this. Anyway, its nice and now and then it might be possible to have that. I will try it. Greets from Germany.

Thanks so much for this video.. It really helped me alot.. I just added red, orange, and yellow peppers.. I also used beef stock instead of shrimp stock.. Overall it turned out good.. Thanks again for your help..
