You can just use regular lasagna noodles and roll each one. You can also use low moisture ricotta or drained small curd cottage cheese instead of béchamel and add some meatballs (pre cooked) to the baking dish.

I know I'm going to catch flack for this, but I'm not a big fan of these cooking segments. Maybe it's just how much I love cooking, but it seems like not only does Seth not enjoy the cooking process, he seems completely uninterested in learning from the chefs, which comes off a bit disrespectful. Maybe if the chefs did their thing while Seth had a drink and bantered with them, the vibe would be more positive.

These 2 actually didn't invent it. My mom has been making these for close to 30 years after having found the recipe from someone else. Growing up we called it roly poly lasagna 😄

I don't know how he does all this while asking questions. It's like acting and trying to remember your lines while using props. I guess he's had a lot of practice by now. But that dish seems like way too much work for how it turns out. I'd just go with the traditional form of lasagna.
