INGREDIENTS
1 (12-inch) baguette, cut into 20 thin slices
2 tablespoons salted butter, melted
1-inch piece fresh ginger, finely chopped (about 2 tablespoons)
1 small red onion, finely chopped
3 tablespoons (10 grams) finely chopped fresh dill fronds, plus more for serving
8 to 10 jumbo shrimp (about 6 ounces; 16/20s are a good size), shelled, deveined, and finely chopped
2 tablespoons mayonnaise
1/4 teaspoon table salt
Pinch freshly ground black pepper
Pinch chile flakes
3 tablespoons (20 grams) grated mild yellow cheddar

A co-worker made a treat for us all a couple times maybe 35 years ago, and I’ve never gotten them out of my head. It was what he called shrimp toast and was very similar to yours except that he mashed the shrimp mixture on the (plain white) bread and deep fried it. I thought I’d died and gone to heaven. Must try your recipe!

Just tried the recipe 10/10!! so good ☺️ I think maybe a bit of lemon would be a nice hint of some acidity but otherwise SO GOOD

Hey, an awkward request, can you maybe do some similar recipes without shellfish? I'm in the category I can't even breathe it now, but I love it. It breaks my heart, why can't I be allergic to something I hate like liver? I am still learning what I can sub in for shrimp and the like. This sounds amazing, I just want it safe. Please? Someone knows, I'm not the only person with this allergy, I'm just the idiot in the corner still learning how to deal with it.

Mushroom toast? Lobster mushrooms would be great, I’d just sauté them in advance! Or perhaps even krab, the artificial stuff from California rolls if you can still eat fish 😅

Canned tuna would hold up well to this combination of flavors- it would be a fancier tuna melt! Tuna is less sweet than shrimp (to my taste) and is also softer so maybe add in a little frozen corn (thawed, but not pre-cooked) to add sweetness and some bite.

@catherine reed Nadia Hussain made a twist on this called ‘Not prawn toast’ where she used chicken mince instead of prawn. Maybe you can check out the recipe.
