I wonder if one could take out and blend the skin peel of beans to get somewhat of the beans flavor that regular akara has, then add a dash of palm oil. Maybe that will give us akara taste without the carb from beans. I think this one definitely has the look of akara, but I doubt it would have the taste.
Sounds interesting using the bean peel. But the work involved! Actually, it would be just the same as washing beans, but you you don't throw away the peel! But what do you do with the beans? It would be an aweful waste to throw it away. I suppose you'd give it to non-keto friends/ family. And nothing wasted!!! 😄

This food is over processed. Not good for digestion. Coconut flour will constipate you. Don't eat for traditions eat for health. We have tasty pastry with cheese and eggs. But there's so much grease in the pastry. You could have a heart attack in a few years.
Well, this is, more or less, how we prepare akara, except with beans. Nigerians have been eating it for eons without getting akara-related heart attacks. Having the chicken instead of the beans is healthy, and makes this meal accessible to diabetics etc. And the lady who developed this recipe suggested adding coconut flour only if you needed to thicken the batter a little more. It's not part of the main recipe. So, that would be a tiny amount. If that's too much for you to tolerate, then you simply leave it out.
