Ingredients:
Chicken Korma:
1/2 cup oil
1 tsp cumin seeds
1 tsp black peppercorns
Whole spices:
2 black cardamom
5 green cardamom
5 cloves
1 star anise
2 bay leaves
1 cinnamon stick
1 kg chicken, cut into pieces
2 tbsp ginger garlic paste
4-5 tomatoes, sliced
Spices:
2 tbsp red chili powder
1 tbsp salt
2 tbsp coriander powder
1 tbsp cumin powder
1 tsp turmeric powder
1 tsp garam masala powder
1 cup yogurt
1 cup water
1 cup coriander leaves, chopped
A few mint leaves (optional)
5-6 green chilies
Rice:
1 lemon, sliced
750 grams basmati rice, 90% cooked
2 tbsp fried onions
2 tbsp oil
2 tbsp food color
Chopped green chilies, to taste
Method:
Prepare the Chicken Korma:
In a large pot, heat the oil over medium heat. Add cumin seeds and black peppercorns, followed by the whole spices (black cardamom, green cardamom, cloves, star anise, bay leaves, cinnamon stick). Cook for about 1 minute until aromatic.
Add chicken pieces and cook on high heat for 3 minutes, stirring frequently.
Add ginger garlic paste, cook for another 3 minutes on high heat.
Add sliced tomatoes, cook on medium heat for 5 minutes until they soften.
Add spices (red chili powder, salt, coriander powder, cumin powder, turmeric powder, garam masala powder) and cook on medium heat for 3-4 minutes.
Add yogurt, mix well, cook for 5 minutes on medium heat.
Pour in water, cover, add coriander leaves, mint leaves (if using), and green chilies. Cook on low heat for 12-15 minutes until chicken is tender.
Layer the Biryani:
Uncover, layer lemon slices on top of chicken korma.
Spread 90% cooked rice over the chicken mixture.
Sprinkle fried onions, chopped green chilies, oil, and food color over the rice.
Cover and cook on high heat for 5 minutes, then reduce to low heat for an additional 15 minutes.
Finish and Serve:
Uncover, gently mix the biryani to combine layers.
Serve hot, garnished with additional coriander leaves if desired.
