Sri Lankan Basic Chicken Curry Recipe
by Aasai Rasai (serves 3)
Ingredients
1 teaspoon curry powder (store-bought)
1 teaspoon cumin powder
1/2 teaspoon coriander powder
1 teaspoon fennel seeds
1 teaspoon green cardamon powder
3 pieces of Ceylon cinnamon
2 Tablespoons Kashmiri chili powder (or paprika)
3 whole cloves
Dry roast all of the above.
3 chicken thighs with skin and bone
1/2 big onion
4 cloves garlic
1/2 large tomato
2 green chilies
1/2 teaspoon turmeric
2 tablespoons cooking oil
1 to 1 1/4 cups water
1/4 Cup thick coconut milk (or dairy cream/similar)
1 teaspoon salt (or as needed)
Few curry leaves (optional)
Method:
Rub the dry roasted spices on the chicken. Set aside. Fry the onions, garlic in the oil until softened. Add green chilies, tomato and turmeric. Add the chicken. Mix well. Cover and cook until chicken has cooked through. Add milk, stir and turn off heat. Let it rest for 30 minutes before serving.
