INGREDIENT List for Chicken Karahi:
1 KG (~ 2 POUNDS) chicken. I am using a mix of thigh and leg pieces as these turn out great in a karahi.
Aromatics:
400gm tomatoes or 4 to 5 tomatoes. If you want more gravy you can use more tomatoes. You must use fresh tomatoes in Chicken Karahi.
1-inch ginger
1.5 tbsp ginger garlic paste. We will be adding it to the gravy plus julienne it for garnishing.
5 green chilies
1/4 cup chopped fresh coriander
8 cloves garlic
1/2 cup onion cut into cubes or big chunks
1/2 cup green capsicum cut into cubes or big chunks.
Traditional Karahi Chicken does not use Onions or Capsicum, but I like adding these as they elevate the flavor.
Whole spices:
2 tsp coriander seeds
1 tsp fennel seed
1 tsp Black pepper
4 cardamom pods
4 cloves
1 inch cinnamon stick
1 dry red chili
Other Spices:
1 tbsp Kashmiri red chili powder
1 tsp turmeric
Salt to taste
4 tbsp neutral oil
2 tbsp cream(optional)
Prepare the ingredients:
Dry roast the whole spices to release their aroma. Cool them down and roughly grind them in a motor and pestle or grinder.
Grate the ginger and garlic to make a paste
Cut the tomatoes into 4-quarters or just half.
Cut the green chillis into half and cut one green chili to garnish
Cut the onion, capsicum, and one tomato into cubes
Chopped the coriander
Julienne inch of ginger to add in gravy and garnish.
