CHICKEN MOMOS
Preparation time: 15 minutes + resting time
Cooking time: 15 minutes
Serves: 4
Course: Snack
Cuisine: Indian/ International
Ingredients:-
Momos Dough
1 cup whole wheat flour
1 ½ cup refined flour
Salt to taste
1 tsp sugar
1 tsp white vinegar
Water as required
Chicken Filling
½ cup green onion, chopped
1 tbsp tender coriander stems
salt to taste
1 tbsp green chili
1 tsp white pepper
1 tsp soy sauce
1 tbsp garlic paste
1 tbsp ginger, chopped
300 gms chicken minced
Momos Chutney
4-5 tomatoes, cut into half
2 dried kashmiri red chillies
Salt to taste
1 cup water
1 cup peanuts
3-4 garlic cloves
1 tsp coriander seeds
Process:-
● Knead the dough using whole wheat flour, refined flour, sugar, vinegar and salt. Dough has to be semi soft. Keep aside to rest for 30 minutes.
● Meanwhile to make fillings in a mixing bowl add all the ingredients and mix well.
● Once the dough has finished resting, lightly flour a work surface, and roll out the dough into medium size thin disk. Stuff the filling into it, give the desired shape to momo and keep aside.
● Steam the momos for 15 minutes in the steamer.
● Remove and serve immediately with momo chutney.
● For momos chutney heat oil in pan add tomatoes, Kashmiri red chillies, salt and water. Allow it to cook for 5-6 minutes.
● Meanwhile in another pan dry roast peanuts, coriander seeds for 2-3 minutes.
● Into a blender add tomatoes along with its remaining water, peanuts mixture, garlic cloves and blend it into a smooth paste.
● Serve this chutney with momos.

I am a Newar (Pradhan) from Darjeeling! Mostly, Tibetans use yeast to raise their dough to make the momos! We, in Darjeeling, do not! My wife makes awesome chicken momos! The chicken mix she makes is so simple! Chicken, Onion, Ginger, Salt, that's it! Simple and tasty!😁 P.S. : Steamed chicken is very dry. So using some chicken fat while mincing the meat for the mix makes the momos juicer and tastier, albeit a little greasy!

The history of momo is quite different in Nepal. We’ve yomari which is steamed sweet dumplings made out of rice flour and caramel in Newari cuisine. In Newari culture Yomari is made only on special occasions and also in yomari punhi It takes place in November/December during the full moon day of Thinlā (थिंला), the second month in the lunar Nepal Era calendar. So while cooking yomari they tried to mixed it up with kachila, Kachila is a special meat delicacy of Newar Community, consisting of marinated raw minced water buffalo meat. And it was developed and standardized for commercial purposes later.

In nepal, Sikkim n Darjeeling typically they add lots of fat in momos' filling. That is why they become so juicy. I am so fortunate that i get chance to make some momos with them at their homestay in hills. I am from kolkata momo is my emotion. ❤️ Love from kolkata.
