I just made this for dinner tonight and it’s so good! Very flavorful. The only change I made was using dried Italian seasoning instead of Thyme because that’s what I had on hand.Thanks for the great recipe!
Me and my husband both give this recipe 5 thumbs up! 👍👍👍👍👍 We switched out the green for the yellow zucchini (what we had growing) and the sour cream for Greek yogurt. The only other thing I added at the end was some dill fronds which complimented the lemon and creamy flavours of the marinade. This is a keeper for sure!

I made your Zucchini Fritters last week (a hit!), and the leftovers were used the next day for breakfast, topped with poached eggs and grated cheese. I’m going to try this casserole tonight; however, I’ll omit the thyme and substitute spices (cumin, Chile powder, etc) and Colby cheese to give it a bit of a Mexican flavor, with sliced avocado on the side. Maybe I’ll include some tortillas, in case anyone wants to create their own burrito.

This was amazing! All the flavor you added was just perfect and the brine was so fresh. I used chicken thighs with the skin on and fried those and then followed the recipe and baked about 45 minutes. Hubby loved it and I will definitely make this again! Thanks so much and I love your channel.
I made this recipe for supper tonight and it was absolutely delicious! Just like you said, it has several different flavors. The problem was that I used brown rice since that is what we usually have. My wife told me it was a mistake; brown rice needs to be cooked first. She was right. The rice stayed on the crunchy side even though I cooked the casserole an additional 35 to 40 minutes. Live and learn. I plan on making this again in the near future using the correct rice. I know it will be a hit with anyone that tries it.
Good to know I was thinking about using brown rice too maybe I'll try quinoa but wasn't sure about that either if the liquid might need to be adjusted for that. Thanks for the brown rice heads up. 😂
Looks really good, you can also change it up by replacing one of the zucchini with a yellow squash, replace the cheese with 2tbl curry powder and have a wonderful curry dish 😊

Hello from Gensac, France. Thanks for not using canned soups as I cannot get them here. But I also don’t have sour cream. Do you recommend using Greek yogurt or crème fraîche? Cannot wait to make this as courgettes are in season here too!
Made this earlier today and it was absolutely delicious. However, despite following the recipe exactly my jasmine rice was still crunchy at the end of recommended cooking time. I ended up having to add way more liquid and almost triple the cooking time. That being said, I would definitely make this again.
Man, this looks good! I think I might add in some red bell pepper, mushrooms and green peas. And maybe a hint of curry powder? A great flexible recipe.

I'm Hungarian so I like casserole type of dishes. Chicken paprikash. Stuffed cabbage. Etc. Hi Germans just don't know about cheese. Cheese is not in Hungarian cooking.
