Today I want to show you how to make the best Chinese chicken salad with a tangy ginger dressing. This healthy Asian style salad recipe has crunchy toppings like baked wonton wrappers and almonds has a rainbow of tastes, textures and colors which makes each bite interesting and it's relatively easy to make.

Salad Base
230 grams napa cabbage
20 grams scallions (chopped)
For Dressing
2 tablespoons rice vinegar
1 tablespoon vegetable oil
1 tablespoon orange juice (or syrup from mandarins)
2 teaspoons hoisin sauce
2 teaspoons soy sauce
1 teaspoon toasted sesame oil
1 teaspoon grated ginger
1 teaspoon salt
1/2 teaspoon hot mustard
For Chicken
4 cups water
1 tablespoon salt
250 grams chicken tenders
For Crunch
40 grams almonds sliced
6 wonton wrappers
1 teaspoon toasted sesame oil
pinch salt
Other Toppings
100 grams red cabbage (shredded)
130 grams canned mandarins (drained)
50 grams carrot (peeled and shredded)
30 grams cilantro (leaves picked from stems)

Thanks Annette! The add protein to boiling water and turn off the heat is kinda like poor-mans-sous-vide. It works because the temperature of the water falls as the protein heats up until the two reach equilibrium. In the case of chicken tenders, they're so thin you have to get them out of the water before they reach equilibrium with the water or they'll get overcooked, but it's nice because there's much less of a temperature gradient in the meat.

What a wonderful meal salad. I'm currently going through different dishes for my Christmas employee potluck meal I have to bring a dish for, and this might be among the top ones as it does build tastes with some healthier options being opened in the chances of meal "competitions" as well, hehe. You're welcome! This does present well for a potluck, but the only problem is that the veggies will wilt and start releasing water when you toss it together with the dressing so it's best to eat it fairly quickly after mixing it. That being said, if you don't mind it looking more like a slaw, it still tastes pretty good after sitting for a while.

I just found this channel while looking for a recipe for Chinese Chicken Salad. Just listening to this man’s voice puts me in a good mood, he’s so happy I just love him. Came back and edited to ask a question: Does Napa cabbage taste different than regular cabbage? I’ve never heard of Napa cabbage - and I live in CA about 30 minutes from Napa 😂 Anyway… just curious about this. 😊

Hi Val, thank you for the kind words and welcome to the channel! Regarding your question Napa cabbage is a member of the cabbage family and looks a bit like an oblong head of cabbage, but that's about where the similarities end. It has thick crisp leaves that are more like lettuce in texture and the leaves are sweeter, milder, and more juicy than regular cabbage. This makes it better suited for raw salads like this (it's also the type of cabbage used in kimchi). I grew up in Napa, CA so I was always confused about the name as well, but it's actually derived from the Japanese word "nappa" which roughly translates to "vegetable leaf".

The dressing is so good I came back here to get the recipe again as I want to make some for a spinach salad. I will be making the salad again soon, it was a hit! Hi Nicholas, it could be a regional thing, but in California it's everywhere from Jack in the Box to Chili's to Cheesecake Factory. Some places call it "Asian Chicken Salad". Have a great week!

@@NoRecipes you know come to think of it there is a version but it's called Asian salad here but it's not necessarily chicken but it has a lot of stuff on it like you know the baby corn all kinds of stuff that you would normally think was Asian you know water chestnuts being sprouts just like you name it it's on there it's like a lot of stuff on it so it's and it's a big salad but it's called an Asian salad but it's a little much anyways you have a great week my brother and you take care I'm still fighting this bronchitis it's kicked my butt but anyways as always your friend in southern Nevada Nicholas take care

What would be a good substitute for the chinese spicy mustard? Or, what are some other ideas to use it if I am able to purchase it?

Hi Selena, you can substitute any hot mustard. It's won't be as spicy, but you could also use regular Western mustard .
