I love this dish. My Mom used the wooden handle of a cleaver like a mortar and pestle to mash the garlic and black beans. Thanks for your recipe. I know I'm going to enjoy it.

Your cooking reminds me of my mom’s cooking. Unfortunately she passed away young so it’s nice to see what is actually in many of her Cantonese dishes. When I ask an aunt she would say a little of this a little of that. There’s never quite a recipe. The spare ribs was one of my favorite as a child as well.

Ms Lum, thank you for tonight's dinner recipe. I've been following you for over a year, and I hope hubby realizes just how lucky he is. Small point from this Jewish maven regarding black bean. I was introduced to them by my Chinese college room mate centuries ago. Black bean sauce improves dramatically if the beans are chopped, and NOT left whole. They take on a much richer, finer flavor chopped, they keep an almost sour/bitter taste when whole. To the point that my clam in black bean sauce is better than our favorite Chinese restaurant's version. (I don't have the heart to tell them, everything else they make is so good.) Again, thanks, and wishing you and your family only the best for 2021. No Covid!

Hi Flo and Dude, I know it might get old hearing over and over how much finding your channel has changed someone’s life but it is so true for me. I live on a limited budget and if I splurge on a Asian takeout meal, I have to cut that purchase somewhere and I never know what’s in it. I will someday own a instant pot or even a rice cooker but for now I know what goes in my meal and I’m learning so much from you both. I thank God (seriously) that I found you. I appreciate the video on sauces and am so excited to go grocery shopping for the different condiments I need and cannot wait to get started. Blessings for you both🙏🏻

Made this dish this past week and it was so good!!! Definitely a childhood fav of mine as well. Reminiscent of Dim Sum on the weekends with family. Now my husband and I live about 3-4 hours from LA and although my family still lives in southern cali and we visit every month or two, we are definitely NOT spoiled with good, authentic Asian food as it is very lacking where we live now. Time to roll up my sleeves and make my own! I have to say, this recipe was easy and delicious! I will definitely make it again!!! Your channel has been a wealth of knowledge, inspiration and confidence booster when it comes to learning how to use the IP. I was so intimidated at first, but almost 1.5 years in, and I'm loving it and can't imagine my life without it. Thanks to channels like yours, it makes it easy and approachable! So thankful I found you guys on youtube from your Costco video! hahaha P.S. might I suggest that Dude demonstrates his knife sharpening expertise on the channel at some point? I've been meaning to get my hubby to learn how to do it so he can sharpen my knives!

Great recipe! This is one of my all time favorite dishes to eat at dim sum restaurants. I only recently have attempted to make this dish at home with a steamer. I have never tried it in an Instapot, but I will definitely try it out when I get home! Thanks!

Grew up on this, and I still make it now that I’m a mom. My learned recipe omits the oils, but includes light soy, oyster sauce, and dried orange peels. I recently adapted this to use boneless pork shoulder ( on sale of course) since my kiddo gets impatient with the bones. My mom had this giant skillet that I swear she only used to make large cake pans of these ribs, and to fry up smelt (also with black beans). The sauce is amazing on rice! 😁 thank you for sharing this recipe and technique.

You know, I love the idea of making this stuff from scratch, but I live really far away from the nearest Asian grocery store. My local grocery store has premade black bean sauce, and it’s closer, so...I appreciate the recipe demo though! Great work, as always.

One of my childhood favorites, too. We had it mainly at home as well since where (and when) we lived, there weren't very many dim sum places when I was a child. As an older adult in my 60's, there are now several restaurants that serve dim sum. Without an instant pot, how long would it take to steam? Keep those childhood faves coming.

If you're using a wok, I'd say about 20 minutes (more if the pieces are meatier).

As Flo was lifting the bowl out of the Instant Pot, I remarked to my mom who was watching with me, about the sauce being gold and not to spill any and then a couple of minutes later Dude said the same thing, LOL!! My dad owned a Dim Sum restaurant here in Louisville, KY and Pai Kuat (spare ribs) were also my favorite! I would always get bowl of white rice and then pour the whole little bowl of ribs over the rice so it would absorb all of the liquid gold. Soooo good!! Thanks for this recipe! I'll have to try it out! :)

Yes, pie gwat with hock au.. Delicious. I love it over rice. I think it must be a money maker dish at the dim sum (yum char) houses because of the small portions served.

Wow! My heritage is Irish and English. My experience with Chinese food is, of course, Canadian-ized. Sometimes, although rarely, I start watching one of your videos and I turn my nose up - not as an insult to you, it's just that I don't think that I would like it. Then, by the end of the video, when the dish is presented, it looks *so* good that I end up wanting to try it. That's what happened here. BTW, one dish I hope you include in the next cookbook is the one for your Chinese Borscht! :-)

These beans are not like regular beans. It's really just for the flavour and if you chop them up real good, you wouldn't even know they were beans. Glad you received the newsletter!

You can skip the wine and it will still taste good.

Usually I would also say omit it but this marinade is quite dry so you will need to add something in its place, I would suggest chicken broth.

I was told if you dont chop the black beans they are bitter. My chinese teacher always made the black beans , garlic, ginger and some salt using side of knife made And made into paste. We sautéed that separately…then added. Love spare ribs and bb sauce.

Hi Flo and Dude, would you please shoot a video about which grocery you go to or recommend? I love your videos! Everything i see you meat in your videos. All so pretty and balance fat. I visit several asian market; none of them have good quality meat. I still get meat from superstore or costco and it limits my choice of meat; dishes i make. T&T supermarket isn't my choice when it comes to meat. I usually get Asian snacks and skincare product from them lol

40 minutes seem like a very long time to me. Maybe try 20 and if they are not as tender you would like, steam for another 5-10 minutes.

Flo, I noticed that when watching you set your timer for 15 minutes, your pressure cooker was set on LOW. Was that deliberate? Just curious because I do believe you usually cook on HIGH unless you mention otherwise.

The light you saw was the "Less" indicator underneath the Low pressure light. So, yes... it was high pressure. 10:14

I cooked my ribs for 15 mins with 1.5 lbs of spare ribs, but when i move them, the ones stuck together is still pinkish however the juices run clear. Is it cooked? I didn't even realize until i ate 3 of them. Im 8 months preggos too :(
