CHOCOLATE GANACHE | pinoy version | 2 ways | 3 types | (tagalog with english sub) | (031)

chocolate ganache (poured, whipped and piped)
750 gms chocolate (i used beryls bittersweet)
300 gms all purpose cream (1 1/4 c)
250 gms chocolate
100 gms all purpose cream (1/3 c + 2 tbsp)
ratio
2.5 : 1 (2.5 part chocolate is to 1 part cream)
adjust your ratio according to your preference. :)

all purpose cream
300 gms = 1 1/4 c
100 gms = 1/3 c + 2 tbsp
5 gms = 1 tsp
15 gms = 1 tbsp
30 gms = 1/8 c
60 gms = 1/4 c
70 gms = 1/3 c
120 gms = 1/2 c
240 gms = 1 c
for the chocolate, i don't recommend to measure it by cups. weighing is more accurate. if you don't have weighing scale, use chocolate bar that weighs 500 gms or 1000 grams (or just divide it into 2 (for 500 gms) or 4 (for 250 gms).
500 gms chocolate : 200 gms cream (2/3 c + 1/4 c)
1 kilo chocolate : 400 gms cream (1 1/2c + 3 tbsp + 1 tsp)

ms.verna, ano po problem mo sa swiss meringue? minsan po tyaga lang kailangan sa kanya eh. un kala mo failed ka pero kulang sa beat lang pala.😊 madali lang po tong ganache pero moody din depende sa weather pero stable naman. more on un time lang magkaiba. 😊

jhoanienie nag-add po ako ng ganache sa whipped all purpose cream, di po pala masyadong stable kaya lumabas lahat sa layer haha. buti nalang maliit yung cake. ngayon alam ko na kung paano :), salamat ulit sa video!

I did this one w/ white choco (3:1 ang ratio) at ngwork. Nagadd pa ako ng cream cheese,nghohold pa rin sya ng shapes. May "healthy" substitute na ko sa buttercream hehe Thank you talaga ate ❤❤❤

nice naman ms.priscilla. im on my 3rd day na sa pag film sa white chocolate ganache. i mean days test. e nag fail ako. so lalabas na troubleshooting na lang un video 😅😂 i use 3:1 din. pero mas malambot kasi ang white chocolate compare to chocolate. naging challenging on my part eh. been years na kasi since gumamit ako ng white choco for ganache with cream. im glad naging ok sya sayo. may i know if nasa pinas ka po? ang lambot din kasi ng choco bar na gamit ko.😢😭 thank you. heaven sent ka. nag think twice kasi ako. di tlaga sya nag set unlike dito sa chocolate version. 😅 troubleshooting na tlaga un mangyayari.😅 galing mo sa with cream cheese po. nice naman.😊 im happy for you po. thank you. as in thank you. right time un comment mo. salamat ad in.

@@abbeycruz9069add more white chocolate po. you can use 4:1 upto 6:1 ratio for white chocolate if ang drip po. if too thick, add more cream. if too runny, let it set muna before gamitin.

3:1 for white chocolate ms.nikki. mas malabnaw si white chocolate kasi. pede din sya ilagay sa fridge ng mga 1 hr or until mag thicken pero haluin mga after 15 to 20 mins. 😊 mas madali ma overwhip ang white ganache kesa kay chocolate po. fyi lang.😊 pero kay poured and piped is same lang.

use 3:1 for white chocolate po. pede hanggang 4:1. mas soft kasi ang white chocolate compare kay chocolate po. im ok na sa 3:1 sa white choco sa weather natin now. ni r ref ko na lang and stir para mas mabilis mag set po. of w whip mo sya. super saglit lang. mas madali sya ma overwhip kesa sa chocolate version kasi. as in saglit lang.😊

too soft ung ratio na to for fondant cakes po. pero if you want tlaga, pede na ung piped po. i have water ganache video po. mas ideal sya for fondant cakes for me po.

yes po. basta be careful lang na hindi ma overheat ung chocolate para di mag split un oil. super low fire or turn off na un fire pag konti na lang un chocolate na buo buo. remove mo na agad sa double boiler.😊

ms.iyah, ang alam ko na replyan ko na to. bigla nawala. ulit.😅 ...di pa po ako naka try ng sevona chocolate pero compound chocolate din naman sya so i guess ok lang po sya. mas bitter po ang dark kesa kay bittersweet po. pero if for filling naman mag b balance na un kasi sweet naman usually ang cakes po.

pede syang initin saglit sa microwave or patong mo sa bowl with hot water po. or, u can add warm cream.😊 i prefer un mag add ng warm cream kasi sensitive sa heat ang chocolates. mag split / oily sya pag nasobrahan po. 😊 thank you so much pi pala.😊

or mag keep ka na lang ng chocolates po then saka ka na gawa ng pang drips. pede ka gamit ng more chocolates para mas thicker agad un consisntency nya and no need to wait for hours po.😊

ms.leysel, pede naman. pero personally, di ako nag g ganche sa chiffon po eh. masyado sya rich tpos light lang ang chiffon cakes po. pero upto you naman. pede sya ilagay sa fridge then bring sa room temp lang uli bago gamitin. im not sure lang sa shelf life nya po.

sa double boiler po. pero i off mo na ung fire pag pinatong na ung bowl with chocolate. un natitirang steam na lang un mag melt sa chocolate para less chance na ma over un init sa chocolate. haluin lang ng tuloy tuloy.😊

Hi. Did you try using nestle cream in can hindi yung nasa carton box? Mas thicker kasi yung can and mas pricey. Mas better ha gamitin yun?

di ko advisable po. too soft kasi sya for fondant. pero if pandikit lang sa cake to fondant, pede naman po. pero if mag sharp edge ka or para mas ma smooth un side ng cake, 6:1 ung ratio na gamit ko po. or try water ganache, un talaga gamit ko under fondant po. 6:1 din, both chocolate and white chocolate po.

adjust it to 3:1 or 4:1....mas malambot si white chocolate kesa kay chocolate po kasi. im ok with 3:1...but if want mo ng mas thicker ganache, go for 4:1 po.

ms.claire, may upload ako mamaya na gamit ko under ng fondant cakes. mas firm po sya kesa dito. malambot kasi ung ratio nito. pang frosting kasi sya. pero pede naman sya use din if di ka mag s sharp edge po. water ganache po gamit ko under fondant. 6:1 ratio. send ko link here pag na share ko mamaya po.

pede sya iwan overnight at room temp then i whip the next day. pede din at least 5 to 6 hrs at room temp iwan (depende sa weather kasi). pede din sa fridge ng mga 1 to 2 hrs. haluin from time to time para magpantay un pag set nya. makikita mo naman sya pag thick enough na din sya.

pede din po semi sweet if you want po. mas prefer ko lang ang bittersweet para balance sya if sweet un cake / cupcake. pero ok lang kung ano want nyo po. ok lang din po mag double boiler. make sure lang na di maabot ng bowl (with chocolate) un hot water po. pede din na i off un fire pagpatong sa double boiler. or remove it na lang sa double boiler bago pa mag melt lahat ng chocolate. sensitive kasi sa heat si chocolate po.
