Recipe (from @Ruthannzimm):
1/4 cup coconut oil
1/2 cup of honey or maple syrup
1/4 cup unsweetened cocoa powder
1 Tbsp vanilla extract
1.5 cups rolled oats
1.5 cups rice crispies
1 cup chopped nuts (I replaced these with more oats)
1 cup chocolate chips (optional)
Melt coconut oil and honey/maple syrup together. Add the cocoa powder and vanilla. Mix in the oats, rice crispies, and nuts. Combine well. Spread onto a baking sheet in a thin, even layer. Bake at 250 degrees F for about an hour, stirring every 15 minutes. When finished baking, stir in 1 cup of chocolate chips, if desired. Let cool and store in an airtight container.
