After so many requests, here is how I make sandwich loaves with freshly milled flour!

Here is how I make it:
6 cups hard wheat berries (white or red)
3 1/2 cups warm water
2 1/4 tablespoons yeast
1/2 cup extra virgin olive oil
1/2 cup honey
3 1/4 teaspoon salt

Loved your technique and your lovely disposition Joy. Listening to your directions and how you manage your time makes me wonder why it took me so many years as an adult to realize how awesome mothers are and how much you all teach us. My mom has passed several years ago and I wish I would have told her how much I appreciated her. Thank you for this video and how much mothers are under appreciated 🙏

My favorite bread pan is cast iron. I season them five times and then I always use butter or lard to grease them before adding in the dough. If you love crust, they make the best crust. The bread just falls out and I just wipe the pans out and store for the next time. I like the wet tea towel trick.

These look great! When I use butter in the pan, my loaves don't usually stick and I take mine out after 10-15 mins.

just got a Joydeem dough maker and was looking for a good test recipe. I ground fresh flour and followed your path. Got 3 medium loaves. Think 2 would have been too much for my pans, but these were a little small. But the crumb was perfect, and they are nice and soft. Tastes wonderful. Thank you!

I make fresh ground flour bread every two days. Switch to silicone pans and you will NEVER have an issue with sticking again. Though I wouldn’t recommend letting it cool at all in the pan. Pull it out, set it on the cooling rack. I also cool bread on its side. It prevents the loaves from deforming. Especially if you let it rise to where it should be before cooking. It will be REALLY soft coming out of the oven.

Look beautiful! Two things I learned … I like how you form your sandwich loaves and also letting it cool on its side. Thank you for those tips! One thing I learned from sourdough baking was called a saltolyse. You let the fresh milled flour, salt, and water rest together for a full hour. Then I work in the dissolved yeast and honey. Just fantastic flavor and I think it makes final bread softer.

Thank you so much, I love your kids. Never tried whole wheat with honey or oil. Was too scared the fat/sweetener would interrupt the gluten structure or mess with the rise. Now I feel bold to try this! Looks gorgeous. Also very impressed with the Bosch.

Use your method with berries and followed part of another ingredients from a book ,Back to basics , it calls for milk,butter,salt in pot till bubbles on side then add to proofed yeast then add flour. I started with 3cof my milled flour then added 1c till not sticky. It called for 400° 50min so I stayed with that part and checked it at 40min. and it was done. I made 2 loaves it was a bit cool today so it took awhile to rise 50min or so, they look nice we'll see how they slice

I just love watching your videos! My husband has gluten issues so am grateful to learn your tips (not brave enough to try wheat yet but when we are, we’ll use your tips). BTW, I use your yogurt video to make yogurt weekly and have shared with my daughters. You’re obviously doing something so right because your skin is flawless and gorgeous! Try sourdough and ESPECIALLY. . . einkorn! It is not only super low in gluten but also very nutritious, much healthier than modern wheat.

I try to let mine cool about 15 minutes before trying to get them out, Using a hamburger spatula works really well to loosen the loaves. I like to see how others do their bread, thank you for helping others.

I made this recipe today. It turned out delicious. I did add some lecithin(sunflower) and some gluten because my husband wants a more 'fluffy' bread. I am so pleased with how it turned out. FMF is definitely a learning process. Thanks for your videos

This video popped up as a suggestion for me last night and I just ignored it because I already bake with freshly milled grains. I have had my milk for around 14 years now! However, the video popped up again this morning, so I decided to give your recipe a try. It was super simple and looks beautiful. It just came out of the oven, so I haven’t tasted it yet. I love your video on making this freshly milled flour sandwich loaf. It turned out great. I'm a newbie. I bought a Wondermill. I was wondering where you buy white rice that is triple cleaned to clean my mill with. I don't want to get the wrong kind of rice to clean it with. Do you have any suggestions?

Nice video. I'd like to ahare a few of my soft-fluff-sandwich-loaf from-fresh-milled-flour tips. Perhaps the best tip, is to bolt your flour, removing some of the bran. Just run the fresh milled flour through a fine kitchen sice. The bran is wonderful in muffins and so many things. Next autolayze without the yeast. Then as you start to knead in your mixer, add one egg the yeast and process for a good ten minutes. Another majormtip, is to incorporate powdered whole milk in the original mix. It really helps with the texture and flavor. Last and optional, but for me essential, I use an all natural dough improver that keeps the breast fresh and mold free for up to two weeks in the refrigerator. The rest of the recipe, is just as you suggest here. The honey is essential. Imsomtimes also add Agave doe a sweeter loaf. I believe the final product of our breads are similar.

Looks great! Will use 1/2 each of Red/White. TFS your technique. I’m going to freeze one of the three loaves (after shaping) and see how that works out. Have you ever done that? Love how you multitask. Really takes me back. My youngest of four is now 50, so it’s been a bit. lol.

I've never frozen the loaves before baking--I'm intrigued! It would be lovely to bake the loaves fresh instead of pulling out an already baked loaf. I hope it works for you!And yes, our babies grow quickly; I like capturing these moments of little hands helping me.

Im brand new to your channel and milling my own flour. In fact, I just received my first order of a variety of wheat berries: hard, soft and ancient. Ive made my own bread, off and on, for years; consistently, for the past couple years. I'm learning so much new information by digging a little deeper! Question: howcdo you store your bread? I make 3-4 loaves per week. I look forward to watching more of your videos! I love your quick and informative style, yet you're informal and friendly. And, you're beautiful, if you don't mind me saying! Im a mom to 7 children, now grown. ...13 Grands at the moment. I so get the "doing what you can when you can" which, by the way, is a skill that translates well into retired life. Blessings to you and yours, Dear Lady!

Welcome to milling your own flour and congratulations on a beautiful family! I appreciate your kind words. :) I have some Tupperware that fit my loaves well. If they're full or dirty, I use plastic bags. I buy the freezer kind so that I can wash and reuse them. I will also freeze loaves of bread in them if I can get ahead.

Never thought of plastic containers! 🤔 Recently, I pondered the wax coated fabric as a storage option. ...my BFF & I have thought about making our own. I might still give that a try. ...unless someone else has tried it and comments it to be unsatisfactory.

I have the same pans and I use room temperature butter and it never sticks. Just make sure you cover it generously.

I've been making bread since I was little and for a long time I have been interested in investing in a grain mill. I finally did it with a gift card. Today I used your recipe to make my first loaves with freshly milled flour. I probably should have used a little more flour because of the weather but it was the first time! I am trying to figure out HOW BUYING BERRIES IS CHEAPER THAN BUYING FLOUR! It is not an "apples to oranges" because of all the reasons WHY to mill fresh flour but it seems that the berries are quite a bit more expensive than flour. Am I missing something? THANKS! For my family budget friendly wasn’t the reason we’re trying fresh milled flour, my family gets stomach issues from the white store bought flour, I did find a flour that works and makes wonderful bread and doesn’t cause issues but it’s much more expensive than the berries, and sourdough bread is the most budget friendly but my family doesn’t like it so we’re trying fresh flour and hope for happy bread eating 😊

A tip: Grease (palm shortening or lecithin-oil mixture works best)and flour your loaf pans. The bread will not stick. I have two glass loaf pans that stick every time unless I take the extra step of dusting with flour.

My bread is in the oven now. It smells wonderful. What speed did you use on your Bosch? I kneeled for 3 minutes, but I never got past sticky. I thought maybe my speed was too slow.

Usually once all of the ingredients are incorporated, I put my mixer on high (my Bosch's highest setting is 4).

No, I don't bake with much all purpose flour anymore. I would guess that if the total weight of flour is the same as the recipe, it would work. 👍🏼 Happy baking!

I knead it on high. On the Bosch mixer, I use setting #4 (out of 4).

You can also buy from Bread Beckers if you want it to come sealed in a food-storage bucket.

What would make my dough not rise after 45 minutes?

My guess would be a bad batch of yeast or water that was too hot and killed the yeast. Bummer! If it is still rising, but more slowly, it could be the difference in temperature between our homes, too.

I buy wheat berries from Azure Standard and grind them into fresh flour with my Mockmill grain mill.

I have tried making this recipe exactly and for some reason after I added the flour it was still so sticky and not dough like at all. Several times this has happened. Should I add more flour? Idk what I'm doing wrong

I would add more flour. Just a little bit by bit until the dough is slightly sticky but can be handled without actually sticking to everything.

I would say hold back your last cup of flour and see how the dough is coming together. If it begins to pull away from the sides of the bowl, that’s good. If it’s slow in doing that, add one tablespoon of flour at a time and see if that helps. Once you see the pulling away, you’re good. Let the mixer form a cohesive dough. The idea is to add less flour, not more.

Another tip: fresh milled flour is stickier than regular flour from the store. Sticky and light = fluffy, light bread. A more dense dough means a tougher bread. I second what was said above, if you definitely feel you need more flour add very little increments at a time.

I milled my hard white berries, six cups equals 8 cups of flour. I was silly, I went ahead and made your bread recipe with the instructions. Then I watched your video again and it was so opposite of the instructions I thought what an idiot I was not to be able to figure out your video recipe and the written recipe were two different things. I guess that’s what happens when you trust RU-vid.

I'm sorry that you had that experience. I am not sure where the video and description disagree. I put 6 cups of wheat berries in my mill for each batch of bread. I hope that if you try it again, it goes more smoothly!

"Setting number 1 on Mockmill" doesn't tell much because everyone adjusts their MM slightly differently when they first buy it.
