Claire Saffitz Teaches How To Make Delicious Chocolate Coupes | Dessert Person
Drinking out of-or even just holding-a coupe glass makes me feel ritzy and Gatsby-
esque, so I love that a coupe isn’t just for gimlets or champagne; it’s also a category
of dessert (often involving ice cream and fruit, but just as often not-it’s a little vague).
I knew "What's For Dessert" needed a homey, straightforward chocolate pudding that was
delicious enough to be served all on its own, but I felt like dressing it up into a fancier,
celebration-worthy dessert, so I layer it with cookies and cream in coupe glasses.
Intermingled with the pudding, the chocolate wafers and whipped cream (which,
together, recall the classic “refrigerator roll” on the box of Nabisco Famous Chocolate
Wafers-a dessert I love) make a texturally varied and balanced dessert. The coupe
glasses make it a party!

2⁄3 cup packed light brown sugar (5.2 oz / 147g)
1⁄4 cup unsweetened cocoa powder(0.7 oz / 21g)
3 tablespoons cornstarch
1⁄2 teaspoon instant coffee granules(optional)
2 3⁄4 cups whole milk (23.3 oz / 660g)
1 1⁄2 teaspoons Diamond Crystal kosher salt or 3⁄4 teaspoon Morton kosher salt
4 large egg yolks (2.1 oz / 60g), at room temperature
1 large egg (1.8 oz / 50g), at room temperature
4 ounces (113g) semisweet chocolate (64%-70% cacao), coarsely chopped
4 tablespoons unsalted butter (2 oz / 57g), cut into 1⁄2- inch pieces, chilled
2 teaspoons vanilla extract
5 ounces (142g) Nabisco Famous Chocolate Wafers (about 23 wafers)
12⁄3 cups heavy cream (14.1 oz / 400g), chilled

@@deathfire12 At least for this recipe she said you can use a stand mixer. I can't think of anything you can do with a hand mixer that you can't do with a stand mixer. Well, maybe extremely small amounts, but then you probably wouldn't need a hand mixer either.

there’s just something so comforting about claire. i’m from iran and as you may already know with all the protests going on it’s basically a civil war out there. watching claire’s videos is like an escape from reality for me; i totally get to forget everything that’s happening around me for a good 20 minutes. there’s just something about her, no one else can make me feel what i feel when i see her on my screen. she’s my forever comfort person. idk how to explain it but shes like cookies and a glass of warm milk on a cold winter night and i’m forever grateful for having found her. Claire, you made a 17 year old fall in love with baking. i’ll forever cherish you and will always support you. you hold a very special place in my heart💛

@@Jeffffrey0902 yea, just an hour ago the IR officers directly shot at a 2 year old in my district. they’re rounded bullets but they still penetrate and cause severe damage. i really hope we can get rid of our government this time. being surrounded by so much negativity, it’s so comforting to know claire’s always gonna be there. i’m glad i have found my way to dissociate from the world, i just love claire so much i really can’t find the words to explain my love for her, i owe her my life ngl cause she has saved me from acting upon some pretty dark thoughts.

I’ve been binging her Dessert person videos and SO HAPPY she’s doing her own thing online. I wish she would come out with a book on just her cooking theory/science. I love her little tidbits on things like gluten chains, sugars structure or fats/moisture/etc working together. She explains cooking in a way that completely makes sense to my brain, where I’d normally be scratching my head and annoyed at the million seemingly unnecessary steps of old recipes or extremely vague directions that rely on gut feeling. As much as I cook, I still like intricate explanations and exact measurements/times/temps

I think it might actually be a thing. Something about kids having a weak sweetness ceiling. And it makes sense because it's big simple energy. And kids are growing like mad. Also there's the children aversion toward bitterness (since bitter can mean poison, something that would impede the development of a growing child at the very least)

This chocolate pudding recipe is legit! It is pretty much what I always make. My stepdad used to make a cheap chocolate pie with a chocolate cookie crust, instant chocolate pudding, and maybe real whipped cream when not cool whip. It was OK. But these Coupes not only look fancier and don't really take that much longer, but the ingredients are so much better. I'm sure they taste much better than the cheap version.

How to avoid that "curdling" when making pudding: USE THE SPATULA THE ENTIRE TIME! I was taught to always scrape the bottom of the pan with a spatula when making pudding and I have never, EVER had anything stuck at the bottom. A whisk doesn't scrape the bottom of the pot well enough. Whisk it to combine it really well, then switch to the rubber spatula and keep it moving. Whisk again when you take it off the stove if you feel like it, but I never do. It's always smooth and perfect. I'm surprised at that, tbh!

My mom always made pudding on a double-boiler. That's how I do it now, too. Same thing - no curdling. I've noticed that a lot of modern recipes no longer use a double-boiler, and cook sets don't have a double-boiler setup as a basic piece, so you have to use a heat-proof bowl over a pot, so you don't have a proper handle, which is annoying. I may have stolen my parents' double-boiler when I moved back to my home town because I missed it...

True, a double boiler would be another great method for this. I have never used one for makingbpudding, mainly because when I make oudding,I want ib15 minutes ago, so I do it fast! 😂 Still, I've never had a problem with it leaving stuff on the bottom of the pot. My mom would be highly disappointed in Claire's technique here. 😂

I made these for thanksgiving dessert. Doubled the recipe, used a couple bars of good 70% cacao eating chocolate from the grocery store. Also stabilized the whipped cream with a little xanthan gum for the longer term and added a little vanilla sugar. Really straightforward recipe to follow, especially if you've ever made custard. SO RICH. In a good way, but wow. I would say 4 oz of this stuff is about all anyone needs. The pudding comes out so intensely chocolate with a nice cocoa powder and the good chocolate that the tons of cream really creates a perfect balance. Absolutely delicious, we're already enjoying the leftovers.

just as a heads up, but if you whip your cream slowly at first, and build speed slowly, you shouldn't need to add stabilizers. i made my whipped cream two nights ago and it's still nice and fluffy at the back of my fridge. i used my stand mixer on the lowest speed for about 3 minutes, then slowly tiered up every minute or two. i finished at a 6, and it was only there for about 30 seconds. but i did whip my cream to stiffer peaks than claire did.

We have a family recipe for basically the same chocolate pudding, but we add a splash of Kahlua when making it and it gives it a slightly more adult taste. This looks so delicious and comforting!

made this recipe this weekend when my best friend visited for a barbie movie weekend. i served them in waterford crystal brandy glasses and they were phenomenal. for years now, since making my first tiramisu, i've been googling around for an "adult elevated dirt cake recipe" and now i've finally found one that doesn't include boxed pudding mix and way too much sugar. thank you for helping elevate my baking skills, claire! 💓 as a note, the nabisco famous chocolate wafers (or whatever their official name is) are no longer sold. i found a different brand of chocolate wafers and they worked really well. (dewey's bakery morovian cookie thins in brownie crisp)

i have been making chocolate silk pies every now and then since a friend mentioned someone bringing one to a potluck and it being a hit. i always have leftover filling so i would make little cups similar to these. this recipe looks so much easier that i may have to switch to just making these instead of the pies. i don't have coupes, but my little rocks glasses are the perfect size.

I tried these as a dessert for Thanksgiving dinner and they turned out fantastic! First time make a chocolate pudding from scratch... and I think they have ruined me forever now and I'll never buy a store bought instant pudding again 😆. At first I questioned not putting any sugar in the fresh cream, but I thought " I trust you, Claire!" and man was that a good choice. The chocolately sweetness from the pudding needed a fresh cream that wasn't too sweet. It was PERFECT, and these were a hit! What is even better is that the title of these sound fancy as F, but they are really simple.

My aunt used to make a variant of this - same basic ingredients & prep, but presentation was a huge bowl, still layered, and she called it muddy delight. It always disappeared quickly at family gatherings.

I always use a silicone spatula instead of a whisk when I cook custard on a stove so nothing sticks to the bottom of the pan.

I know its a minority opinion but I love a good pudding skin. I would put that in several shallow bowls covered but not touching to get maximum pudding skin. Like 1/2 cup per serving for individual pudding with skin servings

When it comes to chocolate, I’m never sure which to use… generally, semi-sweet baker’s chocolate/chocolate chips have strange stabilizers in them that make them re-solidify quickly but sometimes that’s what the recipe was formulated with and actually needs! But I’d rather use real, dark chocolate and I don’t know if that’s ACTUALLY what you’ve used anyway… I’d love clarification in your videos using chocolate which specifically you’re using :)

for what it's worth, i used melting chocolate with no stabilizers and it came out nice and firm, like what i saw claire show on video. i used "beyond good" brand chocolate in 60%. i think next time i'll go darker.

YUMMERS! My plan for Election Day is to pick up the new book at Vroman's in Pasadena, go home and read through the whole thing, and stress-bake as the election returns come in. I guess the way that RU-vid (and much of general public entertainment) works these days, it's not allowed to mention a specific brand unless they've paid some endorsement fee for the segment.

"If you're making this for kids, you might want to add some sugar" "it's a low sugar recipe" One of the many great reasons to use Claire's recipes, hahah. I can't stand dish-ruining levels of sweetness! Yeah, you need some sugar but more does not mean better. And too much makes you feel gross, haha.
