In this video Elijah shows you how to clean a oio (bonefish) to get the meat out. There's a reason it is called the bonefish. Because it is loaded with bones. Elijah will show you how to scrape the meat off without getting bones. The scrapped meat can be used for a variety of recipes. Such as fishcake, wontons and more. It can even be eaten raw. In Hawaii bonefish is an important food source for local families.
