Aasai Rasai Coconut Milk Toffee/ Pol Kiri Toffee recipe
Ingredients:
1 Cup Sugar
1 Cup Water
1 Cup Coconut milk
3 tablespoons Condensed Milk
1 teaspoon Almond Extract (or any flavor)
Boil sugar and water on medium heat until it begins to thicken. Add the condensed milk and stir well. Then add the coconut milk and the almond extract. Reduce heat to low or medium-low and continue to stir. When mixture has reduced and is very thick, with a candy thermometer reading of 240F-242F (soft ball to hardball stage) pour CAREFULLY into a greased, lined pan. Leave at room temperature to set for about 15 to 20 minutes.
When set, break into pieces to share and enjoy!
