The mellow, fragrant black coffee agar-agar sago pudding is made by combining the solidity of agar-agar and the softness of konnyaku jelly. The taste is very delicious.
Ingredients
Top layer:
250 ml of coffee water filtered from rinsed sago
1 tsp agar-agar powder
1/2 tsp konnyaku jelly powder
10g sugar
2 sticks Nescafe Kopi-O
400ml water
Bottom Layer:
40g sago
200ml water
200ml milk
2 tsp agar-agar powder
1/2 tsp konnyaku jelly powder
1 tsp cornstarch
50g castor sugar
Glass container size 18cm (W) x 18cm (D) x 7.5cm (H)

1/2 茶匙蒟蒻果冻粉
2 支雀巢咖啡乌

1茶匙玉米淀粉

Hi .I'm going to try this as it looks delicious. I'm curious about why you use three setting agents to make the jellies and custards? Agar agar, cornflower and gelatin. Just one of these would set the mixtures.. could you explain this technique for me ? Thank you

The perfect agar-agar pudding has to be soft and jiggly in addition to being delicious. When the agar-agar solidifies, there are still many micropores in the inner texture, and these tiny pores will be penetrated by water. When you refrigerate the pudding, part of the water will flow out from it, which will affect the appearance of the pudding. Unless we increase the agar-agar powder to water ratio, if this is the case, the finished product will be very hard, not as soft as anticipated. Therefore, the effect of adding corn flour, a thickening agent is to fill up the micropores, which also help to tendering the pudding as well. In order to enhance further pudding's softness, jelly powder is added not gelatin as you mentioned in your question. Have a nice day. Thank you❤

Bonjour, le sagou est un amidon extrait de la moelle de diverses tiges de palmiers tropicaux. C'est un ingrédient célèbre dans les desserts d'Asie du Sud-Est. Il existe 2 formes de produit final de sagou sur le marché, l'une est en forme de boule de cristal, que j'ai utilisée dans mon ingrédient et l'autre est sous forme de poudre qui est utilisée à des fins d'épaississement.
