Watch as Rasheed talks wet hands, dry hands, and rubbing the nooks and crannies... 😉
Ingredients:
• Dijon mustard
• 2 tri-tips
• 2-3 tbsp Mexican oregano
• 2-4 tbsp ground coffee
• 3 tbsp of salt
• 1 tbsp of cayenne pepper
• 1 tbsp of Mexican chili
• 1 tbsp of dehydrated jalapeno
• ¼ cup of black pepper
1. Preheat and trim the fat.
Get your smoker going! Rasheed likes to start with higher temps so when you lose the heat from opening the grill, you'll be at the perfect temp to cook the tri-tips at around 300°F. Use the sharpest knife you have and trim some fat off the tri-tips, but leave a little on there for extra juicy flavor! A little fat never hurt nobody, it actually makes everything better.
2. Rub it in.
Once the tri-tips are trimmed to your liking, grab dijon mustard and massage it into the tri tip. The mustard will act as a binder for the seasoning in the next step, so we don’t lose any of that goodness.
3. Season generously.
Mix together the Mexican oregano, ground coffee, salt, cayenne pepper, Mexican chili, dehydrated jalapeño, and black pepper. Generously season your tri-tips and be sure you get in on all those crevices!
4. Probes and set up the app.
Insert the probes into the center of the thickest part of the tri-tips and set up the cooks in the app. Rasheed set up the cook after placing the meats in the smoker (which is perfectly fine), but we recommend setting up the cook beforehand! Set an internal target temperature of 135°F for the perfect medium rare, but you can change this to your liking.
5. Let's get to cooking.
Cook low and slow at around 300°F. If you’re cooking on a ceramic grill, place the tri-tips over deflector plates for indirect heat.
6. Remove from heat and rest.
When the app notifies you, remove the tri-tips from heat and rest on a resting rack or cutting board.
7. Munch time.
MEATER will estimate your resting time. Once you've gotten the green light that the delicious tri-tips are ready to eat, dig in!
