Do you recommend doing this method with maybe thinner steaks like ribeye /new York strip lion that are maybe 1 inch thick

Yes you can. I have a T-Bone video where I do a very similar recipe. The time will be much less since the steak isn't as thick and will cook much faster.

Haha no, that handle is made out of a rubber like substance that is made to withstand high temperatures (400 F). I checked the product details before putting that into the oven.
