What if Australians started eating carp? The fish is extensively farmed in Europe, Asia and the Middle East for food, and is one of the most eaten fish internationally. In 2012 the then Lachlan Catchment Management Authority (now Local Land Services) produced a carp recipe book following a carp cooking competition that selected 30 of the top dishes to be featured. This cookbook is freely available and you can download it with the compliments of all of us keen to get people eating carp.

It is interesting to see how other cultures eat fish. I come from a tribe in Africa where our staple food is fish. We usually gut the fish then de-scale it. The fish is then either cooked whole (with the head still attached) or cut into pieces and stewed or fried We have a lot of bony fish, and part of the experience of eating fish in my culture is to get the bones out. As kids, the best part was watching adults throw in whole chunks and spitting bones out. As an adult now, i super enjoy amusing the kids that way

We cut carps into pieces right from top by just descaling them. We never worry about bones. We fry them and put in a mustard curry ! And enjoy with rice or bread !

I've eaten carp from my little pond in Montana. I've learned (from Utube) that they should be killed by icing, and that the small ones (10-11 inches) have fewer to no pin bones. Those smalls are delicious just fried in butter or olive oil after skinning (easily done)

It's great to see more people eating carp. They are an introduced species that is getting out of hand with their overpopulation. Sometimes I see hundreds of them swimming in the shallow water in the Spring with their tail and dorsal fins sticking out of the water.

I read in a fishing magazine that the way to improve the taste of carp is to drop the fish into an ice slurry bath as soon as it's off the hook. Good way to send the fish to 'fish heaven' quickly and humanely, but it also cancels out all the endorphins and stress that affects then taste. As for the kid - it's simply a case of ineffective parenting. It's not uncommon. Me, in a shopping center - "It must be terrible having a disabled child" Mother - "He is NOT disabled!!!" Me - "I'm sorry, I thought he's DEAF! Oh, I see now - he's just ignoring you when you keep on telling him to stop behaving like a lunatic"

I love this. Carp are delicious eating and if you do it wrong and don't like it? Don't stop. Try again. Different ways with different recipes. Sooner or later you'll pick a winner. Hell I've messed up cod recipes when I first cooked it. Keep trying

Nicely filleted, tried filleting a carp myself today not as good as you did though. Found it really hard to try and get the bones out and once I cooked the fillets there was still bones in them. Tastes nice just like almost any other fish.

Soy Sauce, vinegar, some peppers, as sauce, you can just deep fry carp meat and hog on...if people are worried about how carp looks like, then they should look at what a halibut looks like....

@@sikeftw if you can get them on ice relatively quick the fish goes to sleep and draws the blood back into the vital organs, leaving the flesh a bright pinkish white. great for eating.

Hi Luke great video and finally finally I have a cookbook on cooking Carp as in New Zealand we have Koi carp in some of our rivers and we bow fish for them. Ive always looked at them and said to people you must be able to eat these this..Ive always had a negative response from people so now armed with my bow and your cook book its game on... Good idea. Las Vegas lakes have a ton, literally millions of carps that most people find disgusting but in many other countries they eat them. Have you ever thought about soaking them in wine vinegar for a day and then deeo fry the filets? That is what we do with maqueral.

July 20, 2017Thanks for the video as this is the 2nd one I've watch on cooking them. Also downloaded it and the cookbook just to make sure I'm doing it right. The 1st video is young teenager from your country doing the same thing, but at some local park lake. I see he had 2 problems: he scaled the fish and didn't actually have a REALLY SHARP knife to fillet the fish with. Going to watch video again as I couldn't quite hear/understand the part where part of the fish is soaked in milk.

My grandfather use to catch carp and make a fish stew with bell peppers onion tomato paste he would cook it. And put the juice and all over rice. Very good I must say. Now we use halibut. When we can get it

There's a way to fillet carp to remove the extra set of bones they have called 'Y bones". It means the fillets will be smaller than you're used to with most fish but it can be done. I'm sure there's plenty of people that would like carp if they tried it. I've known lots of people that did like it. I'm also pretty sure that carp would have a strong flavor that turns some people off. My family was big fish eaters and strong fish didn't slow them down a bit. I'm not quite that way myself. My mother wanted to try carp and had never eaten it before. She decided this in her last days and I wish that I could have gotten some for her to try but I didn't. I'm sure she would have loved it. Her dad was the only person I ever knew that would eat these little fish back home we called horny heads. Very oily and strong fish. Loads of yellow oil would float to the top of the cleaning water I would have them in it after cleaning. But I kept him supplied in horny heads and my mom with trout but they were always happy with any kind of fish that I tool to them. Even shark and king mackerel. Yuck! lol

Carp is good you get decent flesh off them more people should change their negative mindsets on carp, go down to the local waterways, catch carp you get a free feed and by removing pest carp you help the ecosystem so native fish can thrive instead of carp.

You can pull the skin off with pliers. We like to follow another youtube video and grind the flesh. The big rib bones make carp fries. The other part of the meat is grinder and either baked or fried. The bones are dissolved. This fish tastes better than most fresh water fish. They feed on vegetable matter or fresh fish. The meat taste so good. Americans have to try them.

My son begged to try carp so finally I had him catch one out of the bayou were lived on in Western Michigan. Trying not to grin, I watched him very carefully filet and prepare the fish for frying. He didn't like the smell but again I managed to keep a straight face. While he was pan frying it it stunk up the house bad. Finally it was in nice small golden brown pieces. He did it the same way we did northern pike, perch, walleyes, etc.. I'll never forget the look on his face when he bit into that stuff. hahaha! I nearly fell on the floor laughing. He promptly threw it out and to this day he remembers that education.

ommaagad tis fish huh.i was a student at KU. Kansas river hv many..many. i saw friends fishing. somtimes i followed to play with them. nobody know wat to do with all thos big wet..slimy animals from big kansas river. we just looked and donno wat to do. i rmmber mom cooked fish. so..one day i decided to drag one. so heavy too. carried it...upon reaching at my apt..threw that heavy yellow fish into the sink. i remmber for hour washing it..but still its sooooo slimy..like glue. ooomaagad..the smell..!i cut my story..but till today i cannot...canot forget tis fish. how i removed the big strong scale..hour gone by..finally i won and hv that monster all cut up.its was than almost evening. one whole sunday with tis yellow kansas monster. i remember mom used lemon...onion..tis n that and water...boiling water. nite time came and ther....a pot of fish. with beautiful fresh herb..lemon..tomat. and i was thinking how stupit all my friend....loooook at my beauty dish....fishhh...wat u think ! god was kind to me. i thought why dont i eat some to try before i called all my friends. to eat it of course. i took a piece onto a tiny bowl...n start to forked on its meat und into my mouth... mashallllahhh....ooomaagad..the taste..! u ran to the sink n throw up. my head spinned. i sat on the chair at the table und cried....i cried becos i was shocked...ITS NOT FISH...und i dono wat it was ! and millions tiny hard hooks inside the meat. the meat is hard...tasteless.... und the...smell oooooh...nooo.the smell..! I locked my house...never answer any calls. many months later... kind kansas farmers love me much. they gave me some small bundle of beautiful linen clothes. some yellow stained..some looked slight burnt. its was called Higgins smoke house. the owner Ernie n Goldina told me..inside is fish.....catfish und guess wat ?...... CARP !!!!! I WAS SHAKING....I WENT SHOCKED....but kindly i took the bag with about 10 bundles of linens inside is that monster. put it in my car. drove...so shaking...so dont know...really..really dont know wat to do. till today...i ask Allah swt to forgive me....for throwing that gift. im so sorry. if you angry at my story....i can explain..just WA me +6 018 3546 902

Anyone watching this. Always remove the mud vein this is what gives it such a horrible taste. After removing season it and place in fridge without rinsing with water. Let it firm up and dry. For 30 min to an hour. If you don't have a fridge available just season. Then cook it.

I'm trying to watch this video. I'm trying to pay attention to what I'm being shown and all I see is a young child putting his hands all over the place. All the while an adult with a knife is trying to give cutting demonstration. This young boy needs to be told to sit down and shut up and wait his turn. There is absolutely no harm done in disciplining your child enough to say sit down, I'll deal with you in a minute.

the Australian fisheries have done an excellent job in convincing people that carp are bad fish its not true, many species introduced to Australian waters are dangerous to native species, carp are good to eat ,try before you say yuckky

Here in America we are trying to eradicate 100% of all carp. Many get shipped to china, some to restaurants that will actually eat them. I'd say the amount of people here that actually eat carp though is less than .01%

Clean it. Score and season it. Wire it to a slab of mesquite wood and smoke it for 3 hours. When it's done throw the fish away and eat the board.

Every house in western Pennsylvania has a tub in the basement so when the coal miners come home they had a place to clean up. What we did was took the carp and threw them in the tub filled with water. you throw in several handfuls of corn and change the water daily. wait for all of the mud on the inside of the carpet come out, and that usually took several days. once the water was clean, and the carp was de-mudded then you fillet the carp. We just marinade in Italian salad dressing, then put it on the board, and then follow your instructions.

Might as well have called this video "how to fillet a Carp" and not very well, at that! You showed 90% of him filleting, and for some unknown reason, letting people smell the skin (wtf - why?!) and then the next shot is of some amazing looking fish cakes on the frying pan....thanks for nothing really.

squad 11 weird have you guys ever eatten carp..its like a pretty big food fish in the EU the people i work with are Hungarian and they love Common Carp it depends on how you prepare it i guess..i wouldn't eat it but then again i absolutely love raw fish and i suggested it to them and they looked at me like i was insane..so each to their own,it doesn't take away from the fact that carp is and can be an incredibly valueable resource after the carp herpes virus there's gonna be alot of dead fish..

Let me guess, these so called by themself chefs wash their fillets or throw away the remains ? Thats why there is a huge difference between European, Asian and dont know USA and Australia chefs...IQ Usa and Australian chef < 50....IQ Asian/European chef > 130.

In Australia and America, carp are invasive pest species and are commonly seen as inedible, so it's about teaching people a simple way to cook carp that is somewhat tasty (this video is specifically designed to get people to catch carp and get rid of them). In Europe and Asia, they are native and already seen as a delicacy, so it's about doing the best way of cooking them complexity be damned.
