Woks are probably one of the most versatile cooking utensils in the home kitchen, capable of performing multiple cooking tasks, from stir-frying, pan-frying, boiling, and steaming. For woks with metal handles, they can even be used for baking, broiling, and roasting in the oven. The ability to perform different cooking tasks makes the wok perfect for discovering and exploring different dishes from diverse cuisines, from traditional Chinese dishes to American cuisines.
In this video, I demonstrate the use of the wok to pan-fry steaks. The flat surface of the wok serves as a small frying pan, which is ideal for cooking steaks. Over the years, I have fried steak in wok with a traditional approach using large steak pieces. My approach changed when I ate steak cooked as small cubes. They were served as appetizers and were among the best steaks that I have ever had, moist and succulent. I enjoy the contrast between the charred exterior and the soft inner texture.
I am now using this as a template for cooking other meats, such as salmon, chicken, and pork. This method is ideal for cooking a small amount of meat to use as a side dish or a part of a larger main dish. Also by prepping and freezing the steak in small portions, I am able to thaw individual portions in about 15 minutes. Consequently, I now can have excellent steak anytime I have a craving for a few small pieces to incorporate into my other dishes.
Home cooking is at its best when there are many choices and options. I am less likely to over consumption when I am able to cook my favorite food. In the past, my tendency to eat out in seeking food that I could not cook for myself creates an opportunity of consuming more calories than otherwise. Furthermore, eating fast and processed food causes long-term consequences in leading to chronic diseases. Food is crucial for our well being. Each time you eat is an opportunity to nourish or harm your body.

Thank you... that was enjoyable. I started cooking 54 years ago, and got serious about it as a hobby about 10 years ago. My Friends in Thailand, the Philippines, China, Vietnam, and other nations have pushed me to become a better cook, and expand my thinking which is why I found your video about cooking steak in a Wok! I have a steak thawed and ready to go. I'll try your method tonight!

Tak, thank you so much for showing me how to cook steak! Using your spot seasoning technique, now nothing sticks to my carbon steel wok, and I feel confident enough now to buy a more expensive cut of beef and try cooking it the way you demonstrated here. You have singularly enabled me to start cooking healthy meals for myself and for showing me how to use a wok without a nonstick coating (which is so much more healthy for me). I can’t thank you enough for how much you have improved my life!

Thank you Tak! i barely started to make home cooked meals at 27. Especially in this economy, it’s not really affordable to eat out anymore. i began to learn about different recipes, different wok/pan materials and i’m glad i stumbled upon your instructional videos. i’m going to get a carbon steel wok soon and will definitely follow your seasoning techniques and recipes. i like the way you explain things, and your mannerisms remind me of my own grandfather. u got a new subscriber!

I’m going to try this method soon but with pork belly. I love your analytical approach to solving common cooking problems! This is only the fifth video of yours that I’ve watched since discovering you a couple of days ago. Thank you for sharing this method for cooking small portions of steak. I only cook for myself so I have learned your method of advance preparation and saving in small portions. I have a carbon steel wok and a stainless steel wok. I got the carbon steel wok because everyone said that was the only way to stir fry. Since watching your videos, I tried the stainless steel wok and enjoy its attributes better than the carbon steel wok.

Hello Shirley, I tend to agree with you. I really like my stainless steel wok, and I have been using it more often. I like it being easy to clean and looking nice (vanity on my part). When combining with the spot seasoning method, it has excellent non-stick property. Thank you for your comments.

Great vid and I'll be doing this tonight in my new carbon steel Japanese wok - very much inspired by you! Big thanks from another subscriber in Sydney - Dave P.S. Cubes have 6 sides... for a 4 sided piece you'd have to cut them into triangular pyramids or tetrahedrons! Now that would be a great dish to serve mathematicians!!

I need to make this! I just cook for myself and I very rarely buy steak. After watching this video I will buy a steak and cut it into cubes so I can have a little steak now and then. I know I don't need a whole steak. I also love salmon! I used to live in Denver and I notice the salmon I ate regularly was much better tasting than what I can get where I live now. I miss tasty salmon, especially for my birthday. I have tried to eat less meat and more vegetables. Especially when I was younger. But I didn't enjoy eating out much because I found restaurant food was too salty. Not happy to buy a steak meal that has too much salt for my taste. Thanks for making videos!

Hello Chesh, I feel exactly the same way about eating out, with the main reason in having difficulty in tolerate the salt level in restaurant food. I also find by seasoning and cooking the vegetable with greater attention, I have been able to enjoy the natural flavor and texture of the vegetables more than I have ever had before. @@wokwithtak Oh yes! I agree with you about being more attentive to cooking the vegetables to enhance the flavors. I used to have a big garden of vegetables and herbs and berries. Having variety with every meal of homegrown is so full of natural flavors. I had a neighbor that would severely overcook vegetables. We would occasionally share meals and I often told him that his vegetables were a travesty and should be illegal. But I learned to remove my portion early to allow him to enjoy his horribly overcooked vegetables. My dog thoroughly enjoyed the stir fry rice and eggs again last night with more of the bacon in her food. I added broccoli to my meal, which I stir fried separately because I wanted to add ginger which I don't care for in my eggs. But it makes the broccoli delicious.

Today was my first day cooking steak cubes. Quality of the steak was okay. I didn't want to use premium steak to test my skills on. But as I progress improves at stir frying. I will invest premium steak on sale.
