Traditional Authentic Dinakdakan has Pig's Brain instead of Mayonnaise. Using Mayonnaise has become the trend because it is convenient and readily available. Dinakdakan is a dish that originated in Ilocos Region (Region 1) in the northermost part of the Philippines in main island of Luzon.

Good job, dinagdagan is ilocano dish from northern part of Luzon. Use pork belly or or neck part of pig with the skin is nicer than just meat. Anyway Liza you did a good job for first time cooking it😂 sprinkle with spring onion or parsely which I like not everybody like to garnish. I like pork belly who has skin and fat on it it's delicious.

Thats really how to cook dinakdakan (as called by Ilocanos from the north of the Philippines) or pork sisig in Tagalog. It is more delicious with more fresh onions and kalamansi (filipino lime). Mayonaise is good too but the original recipe uses pork brain which is boiled then mixed like a mayonaise.😅 The good thing is your mom and sis have made it great! When you get back to the Philippines explore the entire Philippines (Luzon, Visayas and Mindanao) for every place and provinces has a lot of different cuisines or especialties to offer. Thanks for letting the world know that our food is really comforting.☺

Mr.Andrei,do you know our native dish ? We called it " Tinumis- a pork meat grind into small pieces and cook with receipe required liked garlic,onions,ginger,a table spoon of salt,food seasoning ,a cup of pork blood,an amount of young new spring tamarind leaves(if you have in Russia)..The taste and color is liked dark brown and very tasty meat oil and juicy mild sour bitter. A special combination to more rice as you can.
